This son and DIL do live close by but I will not be seeing them today. So as usual a card will be going out in the mail filled with Anniversary wishes and lots of love.
Most of what I know about cows I learned on my grandparents farm when I was a kid. My grandfather kept cows and milked them. He taught me how to do it too. My grandmother churned the milk and made butter. She taught me how to do that too. I even learned to make homemade cottage cheese.
I’m so thankful for all those experiences that taught me more than I’d have known otherwise. Living on a farm is a great experience.
We used to go for two weeks every summer and they were some of the happiest times of my life.
Today is the day to cook here at my house and on the menu for today is:
Zucchini, Corn and Egg Casserole
Makes 8 servings
5 cups shredded zucchini and or summer squash
2 Tbsp butter
1 cup finely chopped onion
Pinch of salt plus 1/4 tsp., divided
1 1/2 cups corn kernels, fresh or frozen, thawed
1 1/4 cups cottage cheese
1 cup crumbled feta cheese
1/4 cup chopped red bell pepper
1/4 cup chopped fresh dill
2 Tbsp. flour
1 tsp baking powder
1/4 tsp. ground pepper
10 eggs, lightly beaten
Preheat oven to 350 degrees. Coat a baking dish with cooking spray.
Place squash on a kitchen towel, gather up edges and squeeze out extra moisture.
Heat butter in a skillet over medium heat. Add onion and cook, stirring occasionally until golden brown. Add squash and a pinch of salt. Cook until very soft and dry.
Transfer Squash mixture to a large bowl. Add corn cottage cheese, bell pepper, dill , flour, baking powder, pepper and 1/4 tsp salt.Stir until all combined. Stir in eggs and pour mixture into the prepared baking dish.
Bake the casserole until center is set and edges are lightly browned, about 40 minutes. Let stand 10 minutes before serving.
I didn’t have any feta cheese so for this recipe I will use another cup of Cottage cheese. And as it’s a large recipe I will only make half.
Rain is supposed to be moving in here later today, but the weekend is looking sunny and beautiful!

I love celebrating anniversaries. I had a happy marriage and hope all my children do too.

Those life lessons from a cow are spot on. Tho' I spent several vacations at my grandparent's farm in Minnesota, I don't recall absorbing much knowledge ... too busy having fun, I suppose. We owe such a debt to our farmers; theirs is sure not an easy job!
