Today is Eat Beans Day which celebrates a food that is high in protein and very low in fat. This makes them one of the most heart healthy foods known to man. The USDA recommends that adults eat at last three cups of beans every week which is about three more times more than the average person usually consumes.
There are thousands of different bean varieties. Some of the most popular include soybeans, lima beans, pinto beans, green beans, black beans, white beans, Kidney beans, chickpeas, lentils and black eyed peas.
To celebrate today cook up your favorite bean recipe for dinner tonight. Enjoy !

I love beans and have a variety of them stored in my pantry . There are many recipes that include them in the ingredients and I like to have them on hand when needed. They are very good and good for us too.
I don’t have beans on the menu today but will probably make a dish of baked beans to have on hand as a side dish for the weekend.
On the menu for the weekend is:
BBQ Chicken Sandwiches with Coleslaw
Makes 4 servings
1 lb boneless, skinless chicken brasts
1 3/4 cups cider vinegar
2 tbsp. sugar, divided
1/2 tsp. crushed red pepper
1/2 tsp cayenne pepper
3/4 tsp salt, divided
1/2 cup buttermilk
1/4 cup mayonaise
1/4 tsp celery seed
1/4 tsp ground pepper
1 4oz package coleslaw mix
4 small soft buns or rolls, heated if desired
Place chicken in a saucepan and cover with 2 inch of water. Bring to a boil. Reduce heat and simmer gently, turning once or twice, until chicken is no longer pink in the middle. About 15 minutes
Meanwhile combine, vinegar, 1 tbsp of sugar, crushed red pepper, cayenne pepper and 1/4 tsp salt in a pan over high heat. Bring to a boil and cook about 10 minutes. Transfer 1 tablespoon of the sauce to a large bowl. Cover pan and set aside.
Shred the cooked chicken into bite size pieces with two forks. Stir into the sauce in the pan until well combined. Cover and marinate for 10 minutes. Meanwhile add the remaining 1 tbsp. of sugar and 1/2 tsp. of salt to the sauce in the bowl. Whisk in buttermilk, mayonaise, celery seed and pepper.
Add coleslaw mix and toss to combine. Serve the chicken on buns or rolls with the slaw and any extra sauce on the side.
As mentioned I’ll be having this with a side of baked beans and some potato salad I got at the store this week. I also had a container of premade coleslaw in the fridge so used that instead of making my own. And I had cooked chicken breasts in the freezer saved from another meal making this a very quick and easy meal for me.
It’s looking like another quiet weekend here for me. I have no plans as all my children are busy with other plans, but it looks like I’ll be eating very well for sure.
The weather is mild and just right for enjoying the outdoors, so I’ll be taking my meals on the sun porch. I’m so thankful I have this extra room to enjoy at least 3 months of the year.

It's a cool start to the day in the 50's but we're to warm up to upper 70's !
Love all your flags lined up on your driveway. What a great welcome home greeting they make.
So glad you are having nice weather for the 4th of July weekend. I hope you are able to get outside a bit and enjoy it. Your carport sure looks nice and festive! Enjoy all the good stuff you're making or have on hand for your weekend meals, it all sounds delicious. :)

Showed my niece in New York my husband's handful of cranberry beans from the garden and she was surprised. When I pressure cook beans (so much easier than stovetop), I usually leave a couple of dried beans out. He tried them and, voila, he got a mess drying now for later cooking or next year's planting.
