Today is Vanilla Ice Cream Day which is just one of the many Ice Cream days to celebrate. Vanilla has gotten a reputation for being a bit plain, especially when compared to its more exciting siblings, chocolate, strawberry, mint chip, and cookie dough.
Vanilla ice cream is a classic ice cream choice with a rich history. Though vanilla was not introduced to the United States until the 1790’s when Thomas Jefferson brought the recipe over from France.Vanilla had been used as a flavoring ingredient by the Aztec peoples as early as the 1500’s.
Pick up a pint of your favorite brand at the grocery store to celebrate. Pass up fancy flavors like cookies and cram or fudge brownie for a good old fashioed vanilla!
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
I’ve mententkoned before that vanilla ice cream is something I keep on hand because there is so much that you can do to it by adding your own toppings. The possibilities are endless. I happen to love a scoop over a warm brownie or piece of pie too.
It something I have for dessert often but rarely make my own. We used to have an ice cream maker, but no longer do. I’ll be sure to have some for dessert today to celebrate. but on the menu for today is:
Tropical Shrimp and Pineapple Grilled Skewers
1/2 cup coconut milk
1/3 cup minced cilantro
2 tbsp. lime juice
2 garlic cloves, minced
2 tsp. olive oil
1 1/2 tsp. coriander
1/4 tsp salt
1/4 tsp pepper
30 shrimp pealed and deveined.
30 fresh pineapple cubes
In a large resealable bag, combine first eight ingredients.Add shrimp and turn to coat. Refrigerate 2 hours.
Drain shrimp and discard marinade . On each of 30 metal or soaked wooden skewers, thread one shrimp and one pineapple cube. Heat a grill pan over medium heat. In batches cook kabobs 2 to 3 minutes on each side or untill shrimp turn pink.
Makes 2 1/2 dozen
I serve this over hot cooked rice and a tossed garden salad.
The coconut and lime marinade gives it a delicious flavor.

COUNTING MY GIFTS
I love dessert. All kinds. But there is something about ice cream that makes me happy. I am drawn to its simplicity. I am perplexed by the endless supply of constantly growing flavor options. And I am always in the mood for sprinkles and a sugar cone.
