Today is Pina Colada Day, which celebrates a refreshing cocktail. You don’t need to be on a beach to enjoy this summertime drink. No matter where you are in the world, a Pina Colada is great way to relax and enjoy a little taste of the summer.
The Pina Colada originated in San Juan, Puerto Rico. The term means strained pineapple in Spanish, which makes perfect sense. A traditional recipe calls for pineapple juice, light rum and coconut cream poured over crushed ice.
To celebrate today, fix yourself an ice cold drink, top it off with a mini umbrella and enjoy!

While I rarely have much alcohol on hand, I do love pineapple. I like to have to mixed in with strawberries for a fruit salad, or even mixed in my cottage cheese. You can even buy cottage cheese with the pineapple alreadiy mixed in.
It’s my day to cook for the weekend and on the menu is:
Chicken Fettuccine Alfredo with Summer Vegetables
Makes 2 servings
12 oz pretrimmed fresh green beans
9 oz whole wheat linguine
1 summer squash halved lengthwise and siced.
1 skinless bones chicken breast, cut into 1 inch pieces
1/2 cup Italian cheese and herb flavor cream cheese
2 tbsp. milk
Black pepper
In a 4 quart pot, cook green beans in boiling water for 6 minutes. adding the pasta and squash for the last 3 minutes of cooking. Drain and return to pot.
Meanwhile light coat a nonstick skillet with cooking spray. Preheat over medium high heat. Add chicken, cook for 4 to 6 minutes or until mo longer pink, stirring frequently. Reduce heat to low. Add cream cheese and milk. Cook and stir just until heated through.
Add chicken mixture to cooked linguine mixture, toss to coat. Divide between 2 bowls and sprinkle with pepper.
Serving size is 2 cups
I’ll have this with a simple side salad. I’m glad it’s a smaller recipe so I won’t have too much leftover, but enough to have again for tomorrow’s dinner.

Thankfully it's turning our to be a sunny and warmer day here.The rain has moved out for now.
I remember my first Pina Colada ... on a cruise ship sometime in the early 70's. But when we returned home (to Texas) no-one had heard of them. Sure didn't take long for them to catch on! Hope you're enjoying your mini vacation!
I was lucky enough to enjoy frozen Pina Coladas at the Caribe Hilton in Puerto Rico where they were supposedly invented. They were the best I've ever had! Your weekend dinner sounds delicious. I hope you are enjoying your mini vacation. :)
