Today is the International Day of Friendship which is a time to truly appreciate the friends in your made throughout your life that have made you who you are today.
This holiday was created in 2011 by the UN General Assembly to foster the idea that friendships can inspire peace efforts and bring communities together. These friendships can be between individuals, countries, cultures and beyond.
The UN traditional encourages groups and government organizations to hold public events and promote the sense of friendship and understanding. To celebrate today connect with a friend to catch up.

I have had many different friends over the years. Some I went to school with, some I worked with and some were family. I have friends that act like family and I have family that are my friends. What would we do without them. They are the people that are always there for us to help out when we need it.
I consider all of you that read this newsletter a friend of mine. I share with you every day and that is what friends do they care and share with each other. You all are very appreciated and I want you to know how much I’m thankful for each one of you.
It’s Friday and my day to cook up something new and on the menu is:
Spinach and Mushroom Quche
Makes 6 servings
2 tbsp. olive oil
8 oz sliced fresh mushrooms
1 1/2 cups thinly slice sweet onion
1 tbsp. thinly sliced garlic
5 oz baby spinach, coarsely chopped
6 eggs.
1/4 cup milk
1/4 cup half and half
2 tbsp. dijon mustard
1 tbsp. thyme plus more for garnish
1/4 tsp salt
1/4 tsp pepper1
1/2 cups Gruyere cheese
Preheat oven to 375 degrees. Coat 9 inch pie pan with cooking spray, set aside.
Heat oil in large nonstick skillet over medium high heat, swirl to coat the pan. Add mushrooms, cook stirring until browned and tender.Add onion and garlic cook stirring often until softened and tender. Add spinach, cook, tossing constantly, until wilted. Remove from heat.
Whisk eggs, milk, half and half, mustard thyme, salt and pepper in a medium bowl.Fold in the mushroom mixture and cheese. Spoon into the prepared ie pan. Bake until golden brown, about 30 minutes. Let stand for 10 minutes , slice. Garnish with thyme and serve.
I didn’t have Guyere cheese so I substituted swiss cheese in the recipe. This is a crustless quiche that you can enjoy for breakfast or brunch, but I’m having for dinner tonight.
