Today is National Milk Chocolate Day which celebrates how milk chocolate is different from other chocolates. It is a mix of cocoa solids and either dry ore condensed milk. While dark chocolate is traditionally used for a baking ingredient, this lighter version is used for making candy bars, hot chocolate and other delicious desserts.
Chocolate actually has mood enhancing benefits, it can make you happy. This is due to the fact that it contains a stimulant called theobromine and a compound called anandamide. Now that is a good reason to celebrate Enjoy your milk chocolate your favorite way!

There is no doubt that I love chocolate and will usually have a piece or two every day. It is good and good for us too. Who doesn’t like to feel happier?
It’s Wednesday and my day to cook here and on the menu along with some chocolate for dessert is
Zuchinni Roll Ups Casserole
Serves 4
2 zucchini, trimmed
1/4 tsp salt
1/4 tsp pepper
1/2 cup heavy cream
1/4 cup pesto
1 1/2 tsp cornstarch
1 cup chopped cherry tomatoes
1 cup ricotta cheese
1 tbsp. grated Paremesan
1 tsp Italian seasoning
1 clove garlic, grated
2 tbsp. fresh basil
Position racks in the middle and up thirds of oven. Preheat to 425 degrees. Coat 2 large rimmed baking sheets with cooking spray.
Slice zucchini lienthwise into 1/4 inch thick strips. Discard any small or misshapen pieces. You should have about 16 strips. Place on the prepared baking sheets Lightly coat with cooking spray and sprinkle with salt and pepper. Bake until softened.and set aside to cool slightly.
Reduce oven temp to 350. Whisk cream, pesto, and cornstarch together in and 8 by 8 baking dish. Sprinkle tomatoes over the mixture.
Combine ricotta, Paremesan, Italian seasoning and garlic in a medium bowl. Spread a generous tablespoon of the ricotta mixture.on each zucchini slice. Roll up the slices and place them in baking dish, seam side down. Bake until hot and bubbling. about 25 minutes. Sprinkle with basil before serving
It’s also the day to make up a new menu for next week so I can have my shopping list for when I go after groceries today.
Monday- Chili Cornbread Casserole
Wednesday - Chicken Pot Pie Stew
Friday- Fish Tacos
Weekend- Smothered Pork Chops and Sautéed Greens

Chocolate is good and good for you !
I prefer milk chocolate to almost all other candies! Alas, I have to be content with zucchini. That recipe sounds good!
