Today is National Jump for Jelly Beans Day the candy lovers are encouraged to jump for joy and show your appreciation for jelly beans. These tiny candies evolved from an ancient confection called, Turkish delight, which was one of the earliest forms of hard candy. Our modern day jelly beans gained popularity during the American Civil War. A candy company in Boston began marketing jelly beans as the perfect treat to send to the soldiers and soon everyone was hooked. One of the most famous jelly bean fans is President Ronald Reagan. He served them at his inauguration

There is no doubt that candy is comfort food and it’s affordable.

I do like jelly beans and keep some in the candy dish here on the table. I especially like the orange and red ones. They say if you put a jelly bean in a jar for each fog you see in August, you’’ll know the number of snows in winter.
So I move a jelly bean over to a jar every time we have a foggy morning. We’ll see how close it is when winter comes. I’ll take one back out for every snow we get.
Right now it’s hard to remember the cold days coming our way but they surly will. They make me appreciate the heat in the summer and I will dislike seeing these days go by.
It’s Saturday and my day to cook for the weekend and on the menu is;
Chicken Cutlets with Sun Dried Tomato Cream Sauce
Makes 4 servings
1 pound chicken cutlets
1/8 tsp salt, divided
1/4 tsp ground pepper, divided
1/2 cup slivered oil packed sun dried tomatoes, plus 1 tsp. oil from the jar
1/2 cup scallons, chopped.
1/2 cup apple juice
1/2 cup heavy cream
2 tbsp. chopped fresh parsley
Sprinkle chicken with 1/8 tsp salt and pepper. Heat sun dried tomato oil in large skillet over medium heat. Add chicken and cook, turning once, until browned and an instant read thermometer registers 165 degrees. Transfer to a plate.
Add sun dried tomatoes and shallots to the pan. Cook stirring for one minute. Increase heat to high and add juice. Cook,, scraping up any browned bits until liquid has mostly evaporated. Reduce heat to medium, stir in cream and any accumulated juice from the chicken and the remaining salt and serve topped with the sauce and parsley. You can serve this with rice ore pasta, your choice. Either one is delicious. Although if you add noodles you might want to add a little more liquid to increase the sauce.
