ON THE BRIGHT SIDE
FRIDAY, JULY 9TH, 2021
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is National Sugar Cookie Day which is a day to celebrate a cookie that is seemingly simple, but totally delicious. Traditional Sugar Cookies call for just six ingredient: sugar, flour, butter, eggs, vanilla and baking powder.
Although they are sometimes thought of as plain, there is more than meets they eyes Use cookie cutters to creat shaped sugar cookies and top them with frosting or sprinkles. You can also make cookie sandwiches with two sugar cookies and fillings like marshmallow, melted chocolate, or jam.
To celebrate, order a batch to support your favorite bakery, or make them for yourself. Drop them off for friends to enjoy !
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
The general definition of cookie — a small flat or slightly raised cake — is inadequate and even misleading, given the fact that American’s favorite dessert has assume so many incarnations, so many sizes, and shapes and flavors.
Martha Stewart
I don’t bake many cookies any more. There is only me here to eat them, and Idon’t need them for sure. I usually only make cut out cookies at Christmas time, or some other holiday like Easter.
I want to the doctor for my check up yesterday. My blood pressure is good but I’ve now gained back every pound that I’d previously lost. I’m apparently not getting enough exercise. I’m going to have to lose it before winter sets in again. I always tend to gain weight in the winter, but usually lose it in the summer.
I’ve been trying to cook healthier meals, but that isn’t keeping the weight off. I still have to get the results of my blood tests back. It usually takes a couple of days.
I was so hungry by the time I finished at the doctor’s office from not having had anything to eat. My appointment was a 2 o’clock in the afternoon so I’d missed breakfast and lunch. I decided to go to McDonalds nearby before I made my way to DD’s house. She texted me just as I got there to let me know they were only 10 minutes away from their destination. They’d left very early in the morning and were glad to get there.
The rain came mostly in the morning, and cleared up by evening. Today we’re supposed to be cooler, lower 70’s instead of almost 90 degrees.
It’s my day to cook and on the menu is :
Summer Herb Grilled Shrimp
makes 4 servings
21 to 25 count shrimp, peeled and deveined
1/4 cup olive oil
10 sprigs fresh thyme
4 cloves garlic, crushed
1/4 tsp salt
1/4 tsp ground pepper
1/4 cup lemon juice
1 medium cucumber, diced
3 large tomatoes, chopped
1/2 cup fresh chopped basil plus more for garnish
Preheat oven to 350 degrees. Toss shrimp with oil and garlic on a rimmed baking sheet. Sprinkle with salt and pepper. Bake until shrimp are pink and firm. 8 to 10 minutes.
Transfer shrimp to a large bowl, Discard thyme and garlic. Add lemon juice and stir to coat. Gently stir in cucumber , tomatoes and basil. Arrange shrimp and vegetables in a serving bowl. Drizzle with any leftover dressing and garnish with more basil, if desired.
This will make a great meal for a summer night.
I hope you have a FANTASTIC Friday!

Hope you all have a wonderful weekend!
Glad your blood pressure is good but sorry you gained the weight back. Hoping you can get in some swimming and bike rides now that it's summertime. Enjoy the time at your daughter's place this weekend. :)
That's nice, your DD letting you know they arrived safely.
My mother used to make the best sugar cookie dough! I can't recall having much interest in the finished (baked) product, though. 😋
