Today is National Cousins Day which is dedicated to the wonderful people who helped endure all our family get togethers and holidays. They were there to keep us company at the kids table and for some of us, they were the siblings we never had.
There are different types of cousins. There are first cousins, first cousins once or twice removed, second cousins, second cousins once or twice remover and on and on.
National Cousins Day is the perfect opportunity to thank your cousins for all that they do for you. To celebrate the occasion , find some time to chat over the phone and catch up or send an email.

I have a lot of cousins but rarely see any of them anymore. When we were children we always saw each other at family get togethers. My mom and dad both came from large families which meant that I had over 30 of them all together. A few summers ago one of my aunts and one of my uncles on my mom’s side of the family decided to get us together again and that is what the first picture is of. The other picture is of my grandchildren that are cousins to each other. That picture was also taken a few years ago now at one of our family reunions. There are 21 of them, but a few were missing as they were unable to come to this gathering. I hope they are always able to keep in touch with each other and do better than I do at it.
I always loved being a part of a large family like we had, and that’s probably why I wanted a large family of my own. I would have had 12 if I could have but only had 7 as it turned out. And I am very thankful for each one of them. There’s nothing like a large family and all the love they share.

It’s Saturday and my day to cook for the weekend and on the menu is:
Chicken Cutlets with Sun Dried Tomato Cream Sauce
Makes 4 servings
1 pound chicken cutlets
1/4 tsp salt, divided
1/4 tsp. ground pepper
1/2 cup oil packed sun dried tomatoes plus 1 tablespoon oil from jar
1/2 cup finely chopped shallots
1/2 cup dry white wine, or apple juice
1/2 cup heavy cream
2 tbsp. chopped parsley
Sprinkle chicken with 1/8 tsp. each salt and pepper. Heat sun dried tomato oil in a large skillet over medium heat . Add the chicken and cook turning once, until browned and a thermometer inserted in the thickest part reads 165 degrees, about 6 minutes total. Transfer to a plate.
Add sun dried tomatoes and shallots to the pan. Cook stirring for 1 minute . Increase heat to high and add juice. Cook scraping up any browned bits until the liquid had mostly evaporated. Reduce heat to medium and stir in cream and any juices from the chicken and the remaining salt and pepper.Simmer for 2 minutes. Return chicken to the pan and coat with the sauce. Serve chicken topped with sauce and parsley. This would be good served over rice or mixed with pasta. You might want to double the sauce depending on what you are serving with it.

There is nothing like the love of a large family !
I love it!!! My favorite pic is the last one and then I love the one of your grands! Each one was doing their own thing and they looked precious!!! Cousins are important and me and mine are long overdue for a Cousin Gathering! We were doing them regularly until Covid reared it’s ugly head! Perhaps this fall!!!
I love all the photos! Unfortunately I lost touch with all my cousins long ago. Once we were all adults we just never kept in touch. Enjoy that delicious dinner tonight Ma and enjoy the weekend!
