Today is National Raspberry Cake Day which celebrates celebrates raspberry filling or topping usually in the form of either raspberry jam, actual raspberries, or a combination of both. Raspberries can be stewed or soaked in water prior to baking to prevent burning.
The raspberry is th edible fruit of the rose family , most of which are the subgenus of idaebatus; the name also applies to these plants themselves. Raspberries are perinial with wood stems.
Raspberries ae ani important commercial crop widely grown in termperate regions of the World. Traditionally they were a mid summer crop, but with new technology, cutivars, and transportation, they can now be obtained year round. They need sun and water for optimal development.
To celebrate today, buy or bake some raspberry cake.

I love most any kind of berry so will probably have some today. The nice thing is they are always available at the grocery store.
But on the menu for today is:
Sausage Sandwiches with Roasted Veggies
Serves 4
2 tsp. olive oil divided
2 sausage links
1 green bell pepper, sliced
1 onion, cut into 12 wedges
1 cup grape tomatoes
4 cloves garlic, minced
1 tsp dried oregano, crushed
1 tbsp. mayonaise
1 tsp honey mustard
4 whole wheat hot dog buns, lightly toasted
Coat a slow cooker with cooking spray. Heat 1 tsp of oil in a medium non stick skillet over medium high heat, add sausage . Cook until brown on all sides, turning links frequently.
Add remaining tsp. oil, the bell pepper, onion, tomatoes, garlic, and oregano to the slow cooker, tossing until combined. Arrange the sausages on top.of the mixture in the cooker.
Cover and cook on low for 6 1/2 hours or on high for 3 1/2 hours.
Meanwhile for sauce whisk together the mayonaise and mustard in a small bowl, cover with plastic wrap and chill until serving time.
To serve, spoon about 1/3 cup of the vegetable mixture into each bun. Cut each sausage link in half lengthwise, place each half cut side down on top of vegetables. Spoon the sauce over the sausage.
The original recipe called for chicken apple sausage, but I used Italian sausage. I love the flavor of it when cooked with the onions and peppers. I usually make these with a tomato sauce, but this is a change for variety. I always love to try something new instead of eating the same old things.
They say we should have another mostly sunny day today and really most of the rest of the week. There will be a slight chance of rain later in the week, but only a small chance so it’s looking like a pretty good forecast.

Yes, they even have raspberry jelly filled donuts !
I'd prefer plan raspberries to any of the desserts, they are perfect all by themselves! Enjoy your sausage sandwich this evening. :)
I didn't know any of that about raspberries! Sausage + bell peppers/onions/zucchini are one of Tom's and my favorite meals. I switch up using Italian sausage or Conecuh and do in the Instant Pot with a little low-sodium chicken broth. Happy Monday!
