Today is Cinco de Mayo Day which commemorates the Mexican Army’s victory at the battle of Puebla during the Franco Mexican War. This day is actually a fairly minor holiday in Mexico. Celebrations are usually limited to the Puebla regions and consist of mostly military parades. For Mexican Americans living in the United States, its a different matter. Over the years Cinco de Mayo has evolved into a huge festival that celebrates Mexican culture and heritage . People mark the occasion with elaborate family feasts , parties, mariachi music and traditional folk dancing.
To celebrate mix up a delicious Mexican meal and celebrate!

Cinco de May has come to represent a celebration of the contributions that Mexican Americans and all Hispanics have mede to America.

For today’s dinner I’ll be mixing up some Spanish rice to celebrate.. It’s an old recipe and I’ve fixed it many times. It goes good with some tacos. Which is usually what I’d do, but today I’m going to stick with just the rice.
I hope you can read this recipe. I took a picture of it out of my old Better Homes and Garden Cookbook which I’ve had ever since I got married. It’s a tried and true recipe that works good every time.
The other pictures are of the last time I got together with any of my family for Cinco de Mayo. The date coincided with the party DS#6 gave for his son’s first communion at their house. We don’t have any Mexican heritage, but we do like Mexican food.
Since I don’t have any one to celebrate with the pictures will have to do. It’s a good thing I have lots to share.

Happy Cinco de Mayo, the fifth of May
It's been a while, but I've enjoyed that rice dish for years. Tried and true!
Tom's not said anything about Cinco de Mayo; I think it snuck up on both of us. What you've written about its history? Surprised, that growing up in New Mexico I can't remember any mention of Cinco de Mayo celebrations. I do feel a little sorry for all the Mexican restaurants missing out on their traditional May 5 revenue.
