Today is National Strawberries and Cream Day which honors the combination of fresh sliced strawberries and homemade whipped cream which has been a popular dish for centuries. In fact, in medieval England it was customary for newlyweds to enjoy strawberries and soured cream for their wedding breakfast.
The strawberry is the first fruit to ripen every spring and each refreshing bite contains high levels of Vitamin C, fiber, folic acid and potassium. If you’re feeling experimental there are many interesting variations on the classic strawberry and cream recipe. Try flavoring your whipped cream with amaretto liqueur or substituting a combination of sour cream and brown sugar instead. For a more elaborate dessert, put together a triffle with alternating layers of fruit, cream and a sweet pastry.

I love fresh strawberries. They are very flavorful. This time of year a lot of our strawberries come from Florida and they lose some flavor in the shipping. I haven’t seen or heard if fresh ones are available in Ohio yet. We’ve had an unusually cold Spring so it may be a awhile before we have fresh ones. I love strawberry short cake and that is what my recipe is for today
Strawberry Shortcake
1 1/2 lbs strawberries, sremed and quartered
5 tbsp. sugar
2 c. flour
2 tsp baking powder
1/4 tsp baking soda
2 tbsp sugar
3/4 tsp salt
1 1/2 c. heavy cream
Mix strawberries with 3 tbsp. sugar and refrigerate while juices develop, at least 30 minutes.
Preheat the oven to 400 degrees. Sift together the flour, baking powder, baking soda, remaining 2 tbsp. sugar and salt in a medium bowl. Add heavy cream and mix just until combined. Place mixture in an ungreased 8 inch square pan and bake until golden , 18 to 20 minutes.
Remove shortcake from oven and place on a rack to cool. Cut into 6 pieces and split each piece in half horizontally. Spoon some of the strawberries with their juice on each shortcake bottom. Top with a generous dollop of whipped cream and then the shortcake top Spoon more strawberries over the top and serve.
Whipped cream.
1 1/2 cups heavy cream chilled
3 tbsp sugar
1 1/2 tsp vanilla
1 tsp freshly grated lemon zest
Using a mixer beat the heavy cream, sugar vanilla and lemon zest until soft peaks form about 2 minutes.
I don’t happen to have any fresh strawberries on hand today so I’ll probably have a bowl of vanilla ice cream topped with some strawberry jam instead of short cake. It’s my way of making do with what I have in order to celebrate.
I’m excited to say that today I’m going to get a hair cut. Hopefully tomorrow I’ll have a picture to share of the new me. My short hair cut is looking pretty shaggy right now, but I have a great stylist and I’m confident, she’ll be working a small miracle with this mess. Thankfully she is back in business. The picture below is of one of my previous visits to her salon. My daughter and niece also go to the same gal so they are in the picture with us. We all had back to back appointments that day.
They are saying the rain is going to hold off for one more day so it should be good to get out and about.

My Tom so loves his strawberries. He was hugely disappointed not to find any of the frozen variety while at the grocers this morning. That's a great photo of you all at the hairdressers. Finding a good stylist is sure a blessing!
I know you are excited about getting your hair cut just like I was! My hair doesn't look as good today as it did yesterday when Yulisa did it. I have cow licks all over the place! But it's short and I love it!
I never thoght about using sour cream and brown sugar instead of whipping cream or Cool Whip. I am having Dean and Sherry down for cake later this evening and I forgot the Cool Whip. Thanks to you I now have a Plan B!
I hope Kathy starts cutting my hair again and soon. I have been doing it two times now, and #3 is needed now.
But oh my. Strawberries and cream!
Wish I could get a haircut! And anybody who sees me wishes I could get one too! LOL>
Those strawberries are so pretty! I am sure that I am the only person who doesn't like them, I like the juice but not the berry if you can believe it.
