Today is also Eat What You Want Day which is a day to temporaily say good bye to your usual eating plan. Don’t think about whether something is healthy or not or whether you’re on a diet; simply eat what you like., but do not over do it. If you suffer from allergies or serious diseases, you should think about whether you participate in today’s holiday and keep in mind that eat what you want doesn’t mean eat all you can.
Use this rare occasion and indulge in something you always wanted to try.

My sincerest apologies to this DIL who’s birthday was yesterday on Mother’s Day. I guess with all the fuss about Mother’s Day it slipped my mind and my nifty calendar reminder didn’t remind me either. I try very hard not to forget, but I did, and I am so sorry. I hope it was a double happy day for her with two very special occasions to celebrate. My usual birthday greetings and love will be in the mail to her soon. I can’t say how sorry I am that I forgot. I can only hope to do better next year when maybe two holidays won’t be on the same day. I did fix the date so it will now alert me as it should have . Birthdays are so special I think they should be celebrated all week long anyway!
I’m thankful to say that I can always eat what I want and have no allergies or health concerns that keep me from doing just that. I like most foods and try to eat a well rounded diet. There is not much at all that I don’t like. I do try to keep everything in moderation, but I have a sweet tooth and have to watch I don’t eat too many sweets.
There is not much that I haven’t tried out, so I tried come up with something new and different today to indulge in and this is what I came up with.
Blueberry Peach Cobbler
2 1/4 c. peaches, peeled, pitted , fresh or canned
1 c. blueberries
1/4 plus 2 Tbsp sugar
2 tsp. cornstarch
Juice of 1/2 lemon
1/4 tsp.salt
1 cup flour
4 tbsp. cold butter, cut into cubes
3/4 tsp. baking powder
1/4 tsp baking soda
1/3 c. plain Greek yogurt
1 Tbsp. brown sugar
Preheat oven to 350 degrees . Combine peaches, blueberries and 1/4 c. sugar. the cornstarch, lemon juice and pinch of salt in an eight by eight baking dish. Mix throughly .
Combine 2 Tbsp. sugar, the flour , butter, baking powder, baking soda and 1/4 tsp of salt in a mixing bowl. Use your fingers to break up the butter and mash with the flour until consistency of course meal. Add yogurt and stir gently to create a shaggy dough. Divide dough into 6 mounds. Arrange mounds over the peaches and sprinkle with brown sugar.
Makes 6 Servings.
This recipe will satisfy my sweet tooth, but will be healthier with the fruit than brownies or cake would be. I used drained, canned peaches for this recipe, which really are just as healthy for you as the fresh peaches are. Fresh peaches are sadly not readily available this time of year .
With the exception of forgetting DDIL#3’s birthday, I had a wonderful Mother’s Day weekend and am refreshed and ready to start a new day, and a new week and have a little more energy to get me going. Thank you all for the Mother’s Day good wishes that were sent my way !

Yeay for today's "Eat What You Want" … what a delightful thing on which to ponder. The first thing that jumped in my head is buttered popcorn for lunch. We'll see. Happy Monday!

Happy birthday to DIL and others! Eating what I like/want. I had some Little Debbie's strawberry shortcake rolls, only one. That will do me until about 4 pm.
