Today is National lBlueberry Cheesecake Day which honors one of the most popular cheesecake flavors. It’s an opportunity to enjoy a slice or two today to celebrate.
Although cheesecake can be traced all the wy back to Ancient Greese, the flavor version we know and love today are a fairly recent innovation. People have come up with all sorts of interesting and unique cheesecake flavors, but today is a celebration of the classic blueberry variety.
The type of cheese used to make cheesecake has a huge impact on the flavor and texture of this delicious dessert.l American cheesecakes are made with cream cheese.l Italian cheesecakes are made with ricotta, and German and Polish cheesecakes are made with quark cheese, which is a type of curd cheese.

I do happen to have blueberries, cream cheese and a graham cracker pie crust on hand so I thought it would be appropriate to mix up a cheese cake of my own today.
No Bake Blueberry Cheesecake
18 graham crackers, whole or an already premade graham cracker pie crust.
1/2 c. butter, melted
8 oz cream cheese, room temperature
1 c. heavy cream
1 c. powdered sugar
1 tsp. vanila
1 1/2 c. blue berry pie filling
I had an already made pie crust on hand so I didn’t have to make my own, but if you do, you need to then crush graham crackers until you have fine crumbs. Pour melted butter and incorporate with graham cracker crumbs. Press crumb mixture into bottom and up sides of a cake pan or pie plate.
Refrigerate crust while you prepare the rest of the cheesecake. Combine cream cheese, powdered sugar. cream. and vanilla in a bowl. Beat with a mixer until creamy and mixture is stiff.
Pour cream cheese mixture into crust and spread until even.
Refrigerate at least two hours . Top with blueberry pie filling.
I had to make my own pie filling so I’ve included that recipe too.
Blueberry Pie Filling
4 c. blueberries
3/4 c. sugar
3 tbsp. cornstarch
3 tbsp. water
1 tsp grated lemon rind
1/2 tsp cinnamon
1/4 tsp nutmeg
Combine 1 c. blueberries with 3/4 c. sugar in pan.Simmer on low heat until sugar is melted and mixture is very liquid. Combine cornstarch and water in a bowl. Add to pan with blueberries.Cook over medium heat until mixture comes to a boil and is clear and thick.
Fold in remaining 3 cups of blueberries, lemon rid, cinnamon, nutmeg and butter. Pour hot mixture into a bowl and cool before using on cheesecake.

What’s New at My House

Since we are having summer like weather right now this is a good time to enjoy a cold dessert.
I don't know anyone who doesn't love cheesecake … so, of course, I'm keeping this handy for the first time my son and DIL feel comfortable opening their home again. (The elderly father in law is not doing well and is confined to bed, so Troy is taking all precautions to avoid exposure.) My mother used to make the best cheesecake, but that recipe became lost over the years. All I can recall is her using crushed Zwieback for the crust.
I do like blueberries. That cheesecake recipe looks delicious! So refreshing for a summer day!
