Today is also Lemonade Day which honors a refreshing sweet drink that is one of most popular beverages during the summer time.
The first written evidence of lemonade can be found in medieval Egypt. Lemonade recipes began appearing in the U.S. during the 17th century with the arrival of European immigrants.
There are many different variations of lemonade including raspberry lemonade. sparkling lemonade, frozen lemonade, ginger lemonade and pink lemonade. It is rumored than pink lemonade was invented by a circus performer named Henry E. Allott. During a show, Allott accidentally dropped cinnamon candies into a container of lemonade, giving the drinks a subtle pink hue. Instead of disposing of the lemonade, he marketed it as pink lemonade and sold it to eager spectators.
To celebrate today, wind down with a tall glass of refreshing lemonade!

This granddaughters birthday is another one of those long distance celebrations for me. A card went out in the mail with birthday wishes and love as usual. She is a lovely young woman and has a lovely voice too. She loves to sing and I enjoy listening to her when I get the chance.
I don’t happen to have any fresh lemons today but I do have a bottle of lemon juice so that is what I’ll use for my lemonade today. I always keep some on hand since so many recipes call for a Tablespoon or so of it.
Lemonade
6 1/2 c. water
1 c. lemon juice
1 c. sugar
Mix it all together and serve over ice cubes.
I do happen to have some blueberries so I’m going to make a puree to add to the lemonade and will have blueberry lemonade to enjoy.
Blueberry Puree
2 c. blueberries.
!/2 cup water
Rinse the berries and put them in a saucepan with the water. Bring to a boil and lower the heat. Cover and cook stirring often for 3 minus until softened and deep purple. Puree the mixture in a blender until smooth. Put in refrigerator to chill. To make the lemonade, put the water and lemon juice into a pitcher, add the sugar and stir to dissolve. Add most of the puree, taste and adjust the amount to your liking. Mix well and chill until ready to serve. You can also do this with raspberries, blackberries or strawberries.
I did cook for the weekend yesterday and made a delicious casserole dish recipe sent to me by DDIL#2. I made a lot so I cut the recipe in half.
4 Ingredient Hamburger Casserole.
1 lb box medium pasta shells
1 lb ground beef
2 cans tomato soup
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 c. water
garlic, salt and pepper to taste.
Cook and drain the pasta according to package directions.
Preheat ove to 375 degrees and grease a 9X13 baking dish.
In a large skillet, brown and chop ground beef with garlic powder, salt and pepper.
Add cooked pasta , tomato soup and 1/2 c.water and half the cheese to our skillet with the browned beef. Stir and cook about 3 minutes over medium heat.
Pour mixture into the greased casserole dish and top with remaining cheese. Cover with foil and bake for 20 minutes. Uncover and continue baking an additional 10 minutes to brown the cheese.
Serve immediately and store any leftovers in the fridge for up to 3 days.

That's a cute story about pink lemonade origins. Your blueberry lemonade sure sounds visually appealing. I love lemonade, too; and have gotten in the habit of buying the flavoring drops to add to my water as strong (or subtle) as I'm feeling at the moment. (*smile*)
