Today is Lucky Penny Day which could be your lucky if you find a lucky penny on the ground, like this proverb tells you: See a penny, pick it up. All day long you’ll have good luck. If you are superstitions be careful to only pick up pennies laying face up. Well, whether you believe it or not that you’ll be lucky all day, you are already lucky to find that little penny on the ground after all. And since there is nothing to lose just go our and try your luck..

I always consider myself lucky to find a penny. After all pennies do add up. Some think of them as pennies from heaven sent by a loved one to remind you of them. For me they remind me of In God we Trust. It’s written on the face of every penny and something good to remember especially in times like this. I trust that God will always make the best out of any situation. He always works for the good of those that love Him. In God weTrust is the official motto of the United States. It was adapted by the U.S Congress in 1956.
Some say you should carry a penny wrapped in paper in your purse so you can say you are never broke. Others say keeping a jar of pennies in the kitchen is good luck or if you keep a coin in a baby’s crib, the baby will grow up to be healthy, wealthy and wise.
Some also say that if you find a penny it means more money is coming your way or tossing a penny when you have a problem lets fate take care of the problem for you.
Pennies may seem worthless but on Lucky Penny Day can prove anything but.
Saturdays are always my day to cook for the weekend and since we have a long Mormorial Day weekend I thought I’d find something to fix that is different and fun too.
Star Spangled Layered Dip
2 15 oz cans refried beans
2 cups guacamole
16 oz. sour cream
4 scallions thinly sliced
2 c. Mexican blend cheese
1/4 c. chopped black olives
1 c. crumbled Cotija cheese
1 1/2 c salsa
Corn chips for serving
Evenly spread the refried beans on the bottom of the 9 by 13 inch baking dish. Spread quacamolie over beans then spread the sour cream over guacamole. Sprinkle with scallions then shredded cheese.
to make the shape of a flag arrange black olives in the top left corner of the dish. Sprinkle with a dusting of the cotija cheese. Spoon Salsa in stripe formation on the rest of the dish. Sprinkle Cotija cheese between the salsa to create white stripes. Refrigerate until ready to serve.
I’d never heard of Cotija cheese so I didn’t have any on hand but I googled it to see what a substitute might be. I found that Cotija cheese is a Mexican dry grating cheese similar to Paremsan and that I did have so it’s what I used. Other substitutes could include feta cheese which is also soft crumbly and salty.
Snacks like this can make a meal for me and often do.
Today could possibly be the best day of our weekend, they say more rain is headed our way tomorrow, but Monnday could be just as nice only warmer ! Happy Memorial Day weekend !

Great pictures of son 6 and his family! Sadly no parades this year I fear. Saw an article that they aren't even putting flags on the graves at national cemeteries this year which is a shame because I think that could have been done safely with social distancing.
Bet too many people will stop picking up loose change on the ground these days. I didn't know all the luck a penny could bring! Some interesting facts indeed!

I am SO making this dip! Maybe not this weekend, but soon. Oh, and thanks for the explanation about that cheese; I'd never heard of it either.
Not sure they're 'lucky' but I keep 2-3 in different spots … because seeing it always makes me smile. There was a time I didn't want to pick up a "tails' side up penny, believing it to be bad luck. Then someone reminded me, EVERY penny contains "In God We Trust" … so ya, I'll continue to pick them up. And sanitize later. *smile*
