Today is also National Vanilla Pudding Day which celebrates the delicious creamy pudding we all know and love today It’s been around since the 19th century. Most culinary historians agree that our modern recipe evolved from custards which date back to Ancient Rome.
Jell-O introduced the first line of instant pudding in the 1950s The advertising campaign announcing the new product promoted it as the busy day dessert.
To celebrate today make a homemade vanilla pudding from scratch or from a mix. For an extra special treat, pair it with fresh fruit or chocolate. Yum!

This son’s birthday is another of my long distance celebrations and as always a card will be sent out in the mail with birthday greetings and love.
I do like vanilla pudding and my favorite way to use it is to make banana pudding which is a dish that layers, vanilla wafers, bananas and vanilla pudding topped with whipped cream. This recipe uses vanilla shortbread cookies instead of nilla wafers .
Banana Pudding
for pudding:
1/4 c. cornstarch
3/4 c. suga
6 egg yolks
1/4 tsp. salt
1 1/2 c. milk
1/2 c. half and half
1/2 c. mashed ripe banana
2 tsp vanilla
1 tbsp. butter
2 c. heavy cream
2 ripe bananas, cut in slices
For the Meringue
6 egg whites
1 c. puse 2 tbsp. sugar
1/2 tsp vanilla
1 1/2 tsp apple cider vinegar
For the pudding:
Whisk the cornstarch, sugar, egg yolks and salt in a medium bowl. Heat the milk, half and half and mashed banana in a medium saucepan over medium heat until bubbles form around the edges. While whisking the egg yolks, add the hot milk a little at a time Make sure you whisk well.
Return to the saucepan pan set over medium heat. Whisk until the custard thickens and then boils for 2 minutes. Put the vanilla and butter in a large bowl and strain the hot cream over them in a mesh sieve. Stir until smith them press a piece of plastic wrap directly on the surface and refrigerate until cold.
Whisk the cream in a large bowl until soft peaks form. Whisk 1/3 of the whipped cream into the pastry cream to loosen it, then gently fold the remainder until incorporated. Fold in banana chunks.
For the Meringue
Whisk egg whites and sugar in bowl set over a saucepan of simmering water until the sugar dissolves and mixture is warm to touch. Immediately transfer to the mixer fitted with a whisk attachment and mix on medium high until shiny stiff peaks form. The bowl should no longer feel warm. Whisk in the vanilla and vinegar.
Preheat the broiler. Place 12 ramekins on a half sheet pan. Crumble one cookie into the bottom of each. Divide the pudding among the ramekins, then top with meringue. Broil until golden brown. Stick 2 shortbreads into each ramekin and serve immediately.
You can also use the original classic nilla cookies.
I do have some company coming this weekend. DS#6 and family will be stopping by so this will make a dessert to serve them while they are here. They are in town for a short time and we’ll be keeping our safe distance while they are here.
The pictures above are of my stylist and my new hair cut. It feels wonderful to have short hair again. I think she took off a good 2 inches all over.

Happy birthday blessings to your #4! This is your son who hosted everyone at Christmas, right? Another of my blog friends lives in Florida and Terri said most of their restaurants, etc. have reopened; so perhaps he and his family can get out.
I never tasted banana pudding until my DIL made it last year. Good thing I wasn't left alone with it, on account I might have eaten the whole thing.
Wow, 2"? Your hair must really grow quickly! My hairdresser hesitated when I said I'd like 1" off. It feels wonderfully fresh, doesn't it?
Happy birthday to your son! Your hair cut looks great. I pretty much like any type of pudding but I think rice pudding is my favorite. Good that you will have a chance to see son 6 and family. I am sure the visit will be a great one!
