Today is Bittersweet Chocolate Day which is a sweetened form of dark chocolate. Unlike milk chocolate , it does not cantain any milk solids. Consuming bittersweet chocolate on a daily basis is actually quite good for you. All variations of dark chocolate contain antioxidants that lower blood pressure and help protect your heart. Other heart healthy foods include green tea and blueberries.
Bittersweet chocolate tends to be harder, richer and a common ingredient in baking including chocolate chip cookies.

I love all kinds of chocolate so today is one that I’ll be celebrating. A lot of things that are good for us don’t alway taste good, But chocolate always tastes good to me. It really doesn’t matter what variety.
Most of the time I use powdered cocoa for baking cakes, but today’s recipe is one that uses bittersweet chocolate squares instead.
Chocolate Cake
1/2 c. butter
2 c. sugar
2 eggs
1 c. boiling water
2 squares chocolate
1 c. buttermilk
2 2/3 c. flour
1 tsp baking powder
2 tsp soda
1 tsp salt
1 tsp. vanilla
Cream together butter and sugar. Add vanilla, eggs and buttermilk and mix. Melt chocolate squares in the boiling water and add to mixture. In a separate bowl sift together flour, baking powder, soda, and salt. Gradually add to the first bowl, mixing until smooth. Pour in a 9 by 12 inch cake pan and bake at 350 degrees for 30 to 35 minutes.
They say we’ll be having a high of 25 degrees today so it will definitely be a great day to turn the oven on. Earlier this week I got out and did errands and bought a few groceries, so today I’m staying in and keeping warm. It’s to be a cloudy day but we got a little snow, not much, but it covers the ground and makes things appear brighter.

I too like bittersweet chocolate. I am not a fan of white chocolate, otherwise, all chocolates taste good to me. That cake does look yummy. Something good to make to warm the house on your chilly day!

My Tom's been craving chocolate cake for a while now, so I wasn't surprised when he came home with a box of Duncan Hines mix. Honestly, your 25* sounds wonderful! Our low was but 34* this morning, but it felt nice and brisk during my walk.
