Today is National Pie Day which was created as a day simply to enjoy pie. It’s a day to bake your favorite pie and enjoy a slice or two.
Pies come in a variety of sizes ranging from bite size to ones designed for multiple servings. Pies are defined by their crusts. A filled pie has a pastry lining the baking dish and the filing is placed on of the pastry but left open. A top crust pie has the filling the bottom and is covered with pastry. A two crust pie has the filing completely enclosed in the pastry shell.
Whether you prefer apple, berry, pumpkin or sweet potato, make your favorite for dinner tonight.

There truly is a wide variety of pies and one of my favorite ways to make them is using Bisquick baking mix to make impossible pies. They are quick and easy and require no rolling out the dough to make a crust, because they form their own crust. It makes baking a pie much simpler. And I live a simple life and take the easy way out when I can.
You can make egg pies, fruit pies and vegetable pies with it, Today’s recipe, however, is for a cheeseburger pie.
Impossibly Easy Cheeseburger Pie
1 lb. lean ground beef
1 onion, chopped
1/2 tsp. salt
1 c. shredded Cheddar cheese
1/2 c. Bisquick baking mix
1 c. milk
2 eggs
Heat oven to 400 degrees. Spray a 9 inch deep dish pie plate with cooking spray.
Cook beef and onion in a skillet over medium heat stirring occasionally until beef os brown; Drain. Stir in salt. Spread in pie plate and sprinkle with cheese.
In a small bowl, stir the remaining ingredients with a wire whisk until blended. Pour into pie plate
Bake about 25 minutes or until knife inserted in the center comes out clean.
Makes 6 servings
Here we are mid week already and all the talk is about the cold and snow. It is turning colder again after today and in the meanwhile we have rain making for icy conditions as the temps drop. I’m hoping to get out before that happens and pick up a few things to tide me through the rest of the week. We’l be dropping back into the deep freeze.
I’m tired of talking about the weather so will try and find something better to occupy my mind. We can’t do a thing about the weather so we might as well make our own sunshine. It’s time to focus on the positive things instead of the negative and remember how blessed life truly is.

Those were interesting facts about the pie crusts! Cheeseburgers are right up there among my Top 10 favorite things in the whole wide world! I've not tried baking w/ Biscuit, but this recipe sounds healthier than a mayonnaise-laden hamburger bun. Have a wonderful Wednesday!
There is a restaurant here in Phoenix, I think they are all over, not sure in Ohio, called Village Inn. They offer a free piece of pie on Wednesday. Might be tempted to go there for dinner today, considering it is National Pie Day. We ate there Sunday for breakfast and admired all the pies in the case, but didn't indulge :)
We do talk a lot about weather, don't we? Its one of those safe subjects when starting a conversation with someone I think.
