Today is National Chocolate Cake Day which celebrates everyone’s favorite cake. While cake as a sweet treat and chocolate as a drink have been around since ancient times, chocolate cake is a recent invention. It is believe that the world’s first chocolate cake was baked around the late 1800’s after Dr. James Baker discovered that one could grind cocoa.
Since then chocolate cake has rightfully become its own category of cake with many different varieties. Some of the more popular types include, German chocolate, Black Forest, chocolate fudge and molten lava cake.
A company call O.Duff and Sons created the first boxed cake mix in the late 1920’s. In 1947 after years of research and development General Mills released the first just add water Betty Crocker cake mixes. The available flavors were Ginger, Spice, Yellow and White. In 1948 Pillsbury introduced the first chocolate cake mix.
To celebrate today, just buy or whip up your favorite recipe and enjoy some Chocolate Cake today.

Let’s face it, a nice creamy chocolate cake, does a lot for a lot of people; it does for me.

Most people prefer chocolate cake but I know some who prefer yellow or white cake. However today’s recipe is for a chocolate one.
Chocolate Cake from Scratch - Easy!
2 c. flour
1 c. cocoa
2 tsp baking powder
2 c. hot water
2 c. sugar
2 eggs
2 big round tbsp. shortening
Mix all ingredients together in a large bowl. Bake at 350 degrees for 35 minutes or until cake does done with a toothpick inserted into the center comes out clean.
You can frost it any way you prefer.
I probably won’t be making a cake today because I have a few chocolate muffins on hand and need to finish them before making anything else. But I think this easy recipe is a keeper and will give it a try another day.
I’m hoping to venture out to church today. I missed last week due to all the snow we had, and would hate to miss another Sunday. It seems as though my week was off kilter without it. Other than that I have no plans except for picking up the Sunday paper at the store on my way home.

So surprised to learn box cake mixes have been around so long! The ginger one sounds really good! So I came home from church and informed Tom today is National Chocolate Cake Day. (He brightened up!) Come to think of it, the last chocolate cake I made was 5 years ago and I did it the lazy way in the slow cooker.

I like chocolate cake. My favorite is white cake, but chocolate comes in as a close runner up. Haven't made a cake in several years, nowadays if we need something for celebration we tend to get cupcakes in a variety of flavors. Hope you enjoyed your church service and had a nice relaxed Sunday Ma!
