This granddaughter’s birthday as well as that of DS#6 are both long distance celebrations. And as always cards were sent with lots of love and birthday wishes. Our Princes turned one on DS#6’s 21st. birthday and that is what the picture at the top is. His 21st and her 1st. As you can see by the other pictures, they are both now a little older. I found the cute heart picture frame years ago and ever since it’s been part of my Valentine decorations.
I have a variety of different cheeses on hand here at my house and slowly but surely I’ve been nibbling away on them. I’d purchased them for Christmas just in case company stopped by. Now I have to find some way to use it up before it’s no good. I have put it on crackers along with some summer sausage but one person can only eat so much.
Thankfully it has a good shelf life when kept refrigerated. So today I’m sharing a recipe for some soup with cheese in it..
Easy Broccoli Cheese Soup
1 c. grated carrots
1 c. chopped celery
1 onion, chopped
5 tbsp. butter
1/3 c. flour
1/4 tsp salt
dash nutmeg
2 c. chicken broth
1 1/2 c. milk
3 c. frozen broccoli florets
2 c. shredded sharp cheddar
Cook carrots in onion in butter on medium heat until tender. Stir in flour and spices. Gradually stir in milk and broth. Add broccoli and bring to a boil, reduce heat and simmer until slightly thickened. Add cheese and remove from heat until cheese is melted. Garnish with grated cheese if desired. Makes 6 servings.
I make lots of soups here all winter. They are warm and very much a comfort food.
I woke up to a winter wonderland today. It’s still snowing and the wind is really blowing. I’m wondering just how much snow we actually got. I haven’t ventured out the door yet, but it looks to be at least 6 inches out there. One of my neighbors stopped by yesterday to let me know that he’d help me with clearing the driveway. Looks like I’ll need it for sure.

Happy Sunday from a very cold and snowy northern Ohio!
Happy birthday to DDS#6 and Princess! How neat they share a birthday! Glad that you have a neighbor willing to help you with snow removal, Ma. I've seen pictures on the news about the storm going across that part of the country and it doesn't look "pretty." Making that cheese broccoli soup would be a good activity for a day like this if people had the ingredients. It does look yummy. I like cheese with crackers as a snack. So very tasty. Stay warm!

Thank you for the soup recipe! I took a screen shot of it on my iPad. I just happen to have a big bag of frozen broccoli and I did the same thing you did - bought lots of cheese for the holidays and ended up with extras. I already lost a bit of it. Some specialty cheeses don’t keep as well as others. I’m thinking about making the soup this afternoon and taking it with us when we go back to the ranch tomorrow.
We’ve been in the deep freeze in Texas this weekend but it will start to warm up today!

This is sure one holiday I can feel enthusiastic about … Aside from Limburger, I don't think I've met a cheese I don't love. I'm doing another pork and chile stew tomorrow, but will clip your soup recipe to make while it's still cold!
