Today is National Popcorn Day which celebrates one of the countries oldest snacks. Americans eat about 16 billion quarts of popcorn each year which equates to about 51 quarts per person.
Popcorn, also known as popping corn, is a type of corn that expands from the kernel and puffs up when heated. This snack is usually served either salted or sweetened. In North American it is traditionally served salted, often with a butter topping. However, sweetened versions such as caramel corn and kettle corn are also available.
Depending on how it’s prepared, some consider popcorn to be healthy food. Air popped popcorn is natural high in fiber and antioxidants. low in calories and fat and free sugar and sodium. This makes it an attractive snack o people with dietary restrictions.
So on Popcorn Day make sure to have yourself a great big bowl of this delicious treat!

While microwave popcorn is quick and easy, I prefer to pop corn in a pan on the stove. I buy mine from the Scouts which have a annual popcorn sale every year. It’s the best I’ve found and most every kernel usually pops. I like to salt and butter mine and have it often for a snack. It’s hard for me to watch a movie without also having some popcorn to go along with it.
The news here is filled with warnings for the big snow storm we are to have starting today and into Sunday. Parking bans are in place so no one parks on city streets so the snow plows can get through and along with the snow it is to get very cold outside too. The winds are going to make for some subzero temps. I’m planning on a weekend spent indoors keeping warm. If the weather predictions are right, I won’t be making it out to church on Sunday, because it’s going to take a while just to clear the driveway in order to get out.
Our community does have snow plows that will clear the streets, but I’ve got to do my own driveway. I’ll be taking it slow and easy and do have a small snow blower which should help. Some say we’ll have three to six inches over night, others say 10 to 15 inches. Time will only tell. If the snow is light I can use my trusty snow shovel, but doesn’t sound like that will be the case.
I cooked for the weekend and have some Italian Wedding soup on hand and also a delicious one pot pasta dish to have. Both have spinach in them. I figured I’d be needing some extra energy. Ha! Truth is I got a big container of baby spinach when I got groceries this week and am trying to use it up. The rest will probably go in the freezer. It was way more than I needed.
One Pot Pasta
12 oz. spaghetti
3 c. baby spinach, chopped
2 c. cherry tomatoes, sliced in half
6 c. vegetable stock
1 onion, sliced thin
1 tsp thyme
1 clove garlic
2 tsp. basil
1/2 c. parmesan cheese
3 tbsp. olive oil
salt and pepper to taste
Clean and chop spinach and slice onion into thin strips. Finely chop garlic and halve tomatoes. Then heat up oil in a deep pan. Sauté garlic and onion until translucent. Add pasta, spinach, tomatoes, thyme and basil. Then add broth and bring to a boil. Lower the heat. Stirring occasionally simmer, covered, until pasta is tender and liquid is reduced. Season with salt and pepper and serve with grated Parmesan cheese. I added mine right into the pan and tossed it into the pasta mixture.

Winter is not my favorite season, but I'm doing the best I can with what I've got.
That pasta dish looks delicious! I do like popcorn. It is always good as a snack and so easy to make. Be safe! Sounds like it will be a cold wet weekend. Good that the schools are probably closed on Monday.

I can't decide which I love more -- popcorn or spinach. Good thing I don't have to choose just one, eh? Blessed! I'm shaking my head at all the years I denied myself that buttery goodness for the sake of a smaller pants size. Have you tried putting garlic salt on yours? I learned that trick from my Chicago cousins, way back in '65.
Hoping your severe weather doesn't bring any unpleasant surprises. We're presently under a tornado watch, but tomorrow's supposed to usher in a Big Chill. We've had more opportunities to bundle up in 9 months than we did in the last 5 years back in Arizona!
Where are you? My siblings in the Midwest have had 14" so far last week, don't know what they will have. Grew up in Illinois, remember deep snow all too well.
Popcorn, yes, I love it. This makes me think about it when we head out to a movie.
