ON THE BRIGHT SIDE
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a Special Occasion!

Today is National Spaghetti Day which gives us a great excuse to have spaghetti to eat today. As one of the world’s favorite dishes, spaghetti is more that deserving of its own little holiday. The steady flow of Italian immigrants to the United States brought traditional Italian dishes with it, and spaghetti was offered in restaurants as early as the 19th century.
There are a variety of different pasta dishes that are based on spaghetti from spaghetti Carbonara or garlic and oil to spaghetti with tomato sauce, meat sauce, bolognese, Alfred sauce, and clam sauce. Spaghetti dishes are traditionally topped with with grated Parmesan, or Romano cheese.
Enjoy some Spaghetti today!

THOUGHT FOR TODAY
On the ;Eleventh Day of Christmas, My True Love Gave to Me:
Eleven pipers piping
My gift to you today is a recipe for a rich cheese filled pastry.
Parmesan Pastry Pipes
6 tbsp. unsalted butter
1/4 tsp salt
3/4 c. flour
1 tsp. fresh thyme
3 eggs
3 oz. Parmesan cheese
sour cream
Heat the oven to 400 degrees and line 2 baking sheets with parchment paper
Melt the butter over medium high heat with the salt and 3/4 c. water. Remove from heat and stir in flour and thyme. Cook over medium heat constantly stirring until mixture is a smooth shiny dough, about 1 minute.
Transfer mixture to bowl of an electric mixer and spread up on the sides of bowl to cool. Meanwhile in a medium bowl, lightly beat the eggs. Turn the mixer and medium speed and begin adding eggs a little at a time beating well between each addition.
Stir in cheese and transfer mixture to a resealable bag. Snip off the corner to make a 1/2 inch opening. Squeeze the bag to pipe out logs about 6 inches long, spacing them 1 inch apart on the prepared baking sheet. Bake until puffed and golden brown, about 20 minutes. Let cool.
If desired, place some sour cream into a pastry bag fitted with a small round tip and squeeze sour cream dots onto the pipes and top with fresh thyme leaves.
I haven’t tried these but they do sound good and worth trying out.
It's is the end of another work week which has been a short one for many with New Years falling on Tuesday. I have no special plans today, it’s to be an ordinary Friday here, but then who knows what might happen.
We are to be unusually warm here with a high in the low 50’s and mostly sunny. January is usually very cold and often snowy for us so this is a real treat. Normal temps would be 35 degrees for a high. Today’s pictures are from a year ago at this time.
I hope you all have a FANTASTIC Friday!

Whatever you do today, make it a good one !
Its been colder than normal here, so glad to hear that it is warmer for you! I love spaghetti. Something I haven't had in a bit, other than the TV dinners we eat, but always a favorite to make and enjoy with family.
betty
It's warm here too, MA, in northwest Indiana. 43 degrees as I type this and lots of sunshine. It's predicted that we're going to have many 40's & 50's with sunshine in January, which is mega-odd for us at this time of year. Usually we're buried in several inches of snow by now. When my husband went out the garage way, to get the newspaper this morning, a little spider crawled down. I bet he's confused too. *haha* Love, Andrea xoxo
$1.66 a gallon? I'm impressed! The lowest I've spotted down here is $1.79.
Those parmesan pipes sound really, really good … relatively keto-friendly, too, if I don't go eating the entire batch at one time. :)
I love all things pasta but Louis Dean says he hates pasta......and loves spaghetti!
I think he's funny!!!
I haven't seen gas that low yet but it is pretty cheap right now!! We use deisel in the truck and that price is still up.....
Our Petrol is abut £1.26.9 a litre which converts about $6.37 a gallon. Your price for gasoline sounds pretty good to me! Its been a warmer winter here also, with buds already showing on my hydrangea. I adore Spaghetti. Hubby hates any kind of pasta, so I only ever very rarely get to enjoy it! xoxo
