I can’t say enough about letting your children know just how much you love them. We need to let them know they are unique and special and no matter their circumstance, rich or poor, they are valued. Having worth and dignity is a lesson that begins at home and is often reinforced by our churches and schools.
It is important that every Human Being lives his or her life in dignity, honor, respect, and integrity. The good Lord made us all very special and unique individuals and all are precious in His sight.
My mom used to tell me to remember that no one is better than me, and also that I was no better than anyone else. We are all equal. Wise advice for all of us. When we treat each other with love, we treat them with dignity and respect.
It’s mid week again and time for me to refect upon what I’ve yet to do this week. While not a lot has been done, after today there are still two more days until the weekend.
What I need to do and what gets done are often two very different things. I’ve learned to be flexible and can change plans at a moments notice and try always to remember that Gods plans are the best.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Chocolate Cupcake Day! Chocolate cupcakes are a delightful treat served at gourmet bakeries and kitchen tables across the country.
Cupcakes first emerged during the 19th century in the United States. There are two theories about how they got their name. One claims that the miniature cakes were originally baked in cups. The other suggests that the name comes from the recipe, which was measured out by the cup: one cup butter, two cups sugar, three cups flour, four eggs, one cup milk, one spoonful baking soda.
Cupcakes are now made with a variety of flavors, ingredients, and decorations, but simple chocolate cupcakes remain a perennial favorite.
Heavenly Chocolate Cupcakes
1/2 cup hot coffee
1/2 cup unsweetened cocoa powder
1 cup flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup milk
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla
Preheat oven to 425 degrees. Place cupcake liners in muffin tin. Spray lightly with cooking spray.
Combine hot coffee and cocoa powder. Mix well to dissolve and set aside.
In a large bowl , combine flour, sugar, baking powder, baking soda, and salt mixing well. In a separate bowl, combine milk, oil, egg, and vanilla. Mix well to combine. Add about half of the milk mixture to the flour and mix on medium high speed for 2 to 3 minutes until light and fluffy.
Combine the chocolate mixture with the remaining milk mixture and add to the batter. Mix with batter on medium speed for about 30 seconds, scraping sides of bowl before turning mixer on. Distribute batter evenly to the 12 muffin cups. Batter will be very wet. Bake in preheated 425 degree oven for 5 minutes, then reduce heat to 325 degrees without opening the oven door. Continue cooking at lower temperature for an additional 13 to 15 minutes until a toothpick inserted in the middle comes out clean.
Remove from the oven and transfer cupcakes to a cooking rack as soon as they're cool enough to be touched.
Makes 12 cupcakes

I liked that quote about cupcakes. So true everyone should be treated with respect and kindness. We were all made in God's image and he loves us all the same.

Thanks Ma. Cupcakes are a favorite of mine but I never bake them! Don't know why. And I love what you said at the beginning about telling your children how much you love them. Love covers a multitude of sins!
I've learned that what I need to do will always be there for me to do it tomorrow! And the wonderful thing about being retired is I have the luxury of putting it off until tomorrow!
Cupcakes hold a very special place in my heart. When my DH was diagnosed with lung cancer in 2013, my son sent a sweet card containing a $100 bill ... with a caveat.
Every treatment, scan or other hurdle crossed, we were to go out a buy a cupcake, stick a candle in the center and make a wish. Cupcakes are magic, for sure.
I love that Cupcakes are muffins that believed in miracles! How wonderful. Hardly ever bake cupcakes because I eat them, and I shouldn't but your recipe looks fabulous! Love alll your thoughts, but especially your mother's words. Are mother's not amazing! Love and hugs and thanks for all you share. xoxo
