Today is World Habitat Day which is celebrated each year on the first Monday of October. The holiday was created by the United Nations in order to promote sustainable urban development and adequate shelter for all. It is also intended to remind the world of its shared responsibility for the future of the human habitat.
Habitat for Humanity works side by side with their global partners to work to provide homes for everyone who needs one, and encouraging people to work towards a better future for themselves and the world. Half of the human population lives in poorly managed towns and cities where adequate shelter and basic services like water, sanitation, and electricity are threatened.

I am very thankful that I’m able to live where I have basic services like water, sanitation, and electricity. It’s easy to forget how blessed we are. Our homes give us a sense of strength, self reliance, and stability, which are valuable treasures in an ever changing world.
Today we are once again getting a little taste of summer. It’s to be close to 80 degrees. This roller coaster weather is a little hard to take. Yesterday morning when I woke up it was only 37 degrees here, but then warmed up to 70. One way or the other I get to stay comfortable. I have central heat and air conditioning but many do not. There is so much I need to remember to be thankful for.
The trees still don’t seem to be changing colors much but there are lots of leaves falling to the ground already and I’ve run the mower to mulch them up twice now. It’s a job that won’t quit until the trees are bare or the snow falls, which ever comes first.
What ever the weather, I try to the make the most of what I have each and everyday and am thankful for it and pray for those less fortunate

WHAT’S NEW IN THE KITCHEN

It's National Fried Scallops Day!
Scallops are a highly prized seafood delicacy, known for their delectable taste and the variety of ways in which they can be prepared.
This simple one pot lemon scallop pea spaghetti comes together in less than 30 minutes.
One Pot Lemon Scallop Pea Spaghetti Recipe
serves 3-4
1/4 cup olive oil
1 lb small scallops
4 cloves of garlic, minced
1 teaspoon red pepper flakes
2 1/2 cups chicken broth
1/2 pound spaghetti
1/4 cup lemon juice
3/4 cup frozen peas, defrosted
1/4 cup roughly chopped flat leaf parsley
red pepper flakes, to serve
salt and freshly ground pepper
Pat the scallops dry and season all sides generously with salt and pepper. Heat up a small amount of olive oil over medium high heat and cook the scallops until golden brown on both sides, 1 to 2 minutes per side. Remove from the pan and set aside.
Add the remaining olive oil to the pan and turn the heat to medium. Add the garlic and red pepper flakes, and cook, stirring, until the garlic is slightly golden, but not brown, about 1 minute. Add the chicken stock and uncooked pasta. Bring to a boil and then turn down to low. Cover and cook for 8 minutes. Making sure the pasta is done.
Remove the cover and simmer to reduce the sauce, stirring occasionally, about 5 minutes. Remove from the heat and stir in the scallops, peas, lemon juice, lemon zest, and flat leaf parsley. Season with salt and freshly ground pepper to taste and enjoy hot!

I love your quotes! I agree.....today is my one day to 'stay at home' this week! No make up, no hairdo, no fancy clothes. As a matter of fact, I am propped up in bed with my second cup of coffee visiting with you and a few other friends. Louis Dean and I said we'd meet up out in the gazebo in a bit to do our reading. I have read many of Melodie Beattie books and am particularly fond of her Daily Meditation one. It's divided up for 365 days and I have it several years. I decided to give it a break this year and then changed my mind. Ice been looking for it since a March and can't remember where I put it! Perhaps I can search some more today!

Yes for the one pot meals. Your stew looks amazing. I agree that we often forget to be thankful for the wonderful simple things we have. Last week I wrote the words, 'hot water', in my gratitude journal. Can't imagine what it would be like to not have not water coming out of the tap. We are so spoiled! Have a wonderful Monday!
