Today is United Nations Day which recognizes the United Nation organization and all who serve and participate in this world organization. The United Nations is dedicated to world peace, and to the betterment of humanity through a wide range of program from world hunger to environment and health issues.
Almost all of the more than 100 countries in the world are members of this organization. Some of the basic rights and privileges enjoyed by people around the world are a result of the work done by the United Nations. Recently, access to the Internet was declared a basic human right, a declaration which ensures that everyone has access to the world wide information and communication network. While this doesn’t guarantee that everyone will have the ability to access the internet, it does guarantee that everyone has the right to.

United we stand, divided we fall
I love the word united. When we are united in something, the work is always easier. Many countries working together will help make the world a better place.
Striving to make things better in our world basically starts at home. You may think that you need to be
a world leader or a billionaire in order to make a difference. Not true at all. Small acts of kindness can go a long way in making the world a better place. Little gestures can create or strengthen our sense of community and share humanity, lightening our burdens for just a moment and giving us something to smile about. And that is no small matter.
Anything that shows people that you care about them has the potential to the make the world a better place.
Remember that every single thing you do makes a difference.
Yesterday I did a little cleaning and some laundry and made a quick run to the store for some things I was out of. It was a good start to the week. Tuesdays here are usually a planning day here at my house. A day to make my to do list, to pay bills if there are any and a day run errands. I have a few goals in mind for this week in addition to the daily tasks. The car needs an oil change, I need to get my flu shot and I hope to get over to my sisters house for a visit. We’ll see how it goes…

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Bologna Day which is full of baloney!
Properly spelled Bologna, it is sometimes spelled Baloney. It is pronounced like the latter spelling. Bologna is a sausage. It's commonly used as a luncheon meat. Mom and kids know it well.
When it comes to bologna, there definitely is variety. There is what you and I would call regular Bologna, German Bologna, Beef Bologna, Kosher Bologna, and more. Depending upon the kind of Bologna, it could include pork, beef, chicken, and spices.
Old Fashioned Bologna Spread
1 1/2 lbs. coarsely ground bologna
4 hard boiled eggs, finely chopped
4 oz. jar sweet pickle relish
1 tbsp. mustard
1 c. mayonnaise or salad dressing
Pepper to taste
Combine all ingredients until well blended. Chill until ready to use. Butter buns first to keep the spread from soaking into the bun. Makes 1 quart of spread, enough for 3 dozen buns.

I haven't had a bologna sandwich in years. My mom used to make something similar to the recipe you shared here and boy was it delicious! I too agree that small acts of kindness can make the world a better place. Have a good Tuesday, Ma!

Bologna sandwiches were a staple in my childhood home ... and my lunch bag.
I don't recall it containing sweet relish, but this spread sounds exactly like my grandmother's recipe for "Easthampton Spread"! Mother would fasten the meat grinder to the edge of the kitchen counter and crank out that deliciousness. I haven't had that since my school days... thanks for the memory!
I like the idea that everyone has a right to internet Pam, but implementing that right is a hard thing to do for many in the world. I have a love it/loathe it relationship with Bologna. I am a Bologna snob. I only like certain kinds and only in certain ways. Fried Bologna is something I always liked, with crisp brown edges, and always all beef. Having said that, it is not something which we get over here in the UK at all, so I miss it! xoxo
