Today is National Pumpkin Day! Pumpkins are the harbinger of the harvest season, appearing every year as the first sign of autumn. Did you know that there are over 45 different varieties of pumpkin? They range in color from white, to red, to even blue!
Pumpkins can be grown on every continent except Antarctica, and the United States produces about 1.5 billion pounds of them each year. A Wisconsin farmer grew the largest pumpkin ever recorded. He used seaweed, cow manure, and fish emulsion to grow his pumpkin, which weighed a total of 1,810 pounds and was the size of a dumpster!

I do love everything pumpkin. I love it’s bright color, orange. I love to eat things made with pumpkin, pies. And I love cute faces carved on pumpkins, happy!
To celebrate today I chose some pumpkin pictures from the archives to share. Pumpkins can make for a lot of fun and a great deal of good eating.
Pumpkin is nutrient rich due to its bright orange color. This orange color comes from beta-carotene, an antioxidant and beta-carotene is converted to vitamin A in the body. Pumpkin is also low in calories and a good source of fiber, containing 50 calories and three grams fiber per one cup serving. It’s also an excellent source of potassium, which helps your muscles contract, regulate fluids, maintain normal blood pressure, and balance minerals in and out of body cells.
It’s always good to know that something you like to eat is also good for you too.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Mincemeat Day which celebrates a sweet and tasty meat treat. Mincemeat dates back to medieval times. It was a way to preserve food. It was also a treat, mixed with sweet fruits. Somewhere in the last half of the 1900's, it lost it's popularity. A whole generation has grown up, not knowing what it is, or having ever tasted it.
Today, it is most often served as Minced Meat Pie. Over the years, the amount of meat in the recipes was reduced. In older recipes, you will find meat and or suet among the ingredients. More modern recipes, it contains little or no meat, and is largely a fruity pie. It remains a traditional pie at Thanksgiving for many families.
If you’re looking for something a bit more modern, but still with a traditional air, try this 19th century recipe:
19th Century Mincemeat
2 lbs raisins
3 lbs currants
1½ lbs lean beef
3 lbs beef suet
2 lbs moist sugar
2 oz citron
2 oz candied lemon peel
2 oz candied orange peel
1 small nutmeg
1 pottle, 1/2 gallon container, of apples
the rind of two lemons, the juice of one
1/2 pint brandy
Stone and cut the raisins once or twice across, but do not chop them; wash, dry and pick the currants free from stalks and grit, and mince the beef and suet, taking care the latter is chopped very fine; slice the citron and candied peel, grate the nutmeg, and pare, core and mince the apples; mince the lemon peel, strain the juice and when all the ingredients are thus prepared, mix them well together, adding the brandy when the other things are well blended; press the whole into a jar, carefully exclude the air, and the mincemeat will be ready for use in a fortnight, two weeks later.

Wow, that was one big pumpkin! I too like a lot of things made with pumpkins. I bet a lot of people will be carving them in the days ahead.

my, my, I don't think I will make that mincemeat pie. I just might buy a jar at Krogers though, cause I love it. My pumpkin crop was small this year but I love growing them. Maybe I will try a big one next year, if I can find some seaweed that is. Happy Day ma.
I, too, love all things pumpkin. Tom not so much, so it's not worth making or buying an entire pie, etc.
