I think I’ve lived a good life and have many happy memories of days gone by, but that doesn’t mean that isn’t room for improvement. I’m not perfect for sure. I really eat more goodies than I should and don’t get enough exercise. I suppose those two things alone, could make my life better, but I’m sure there is a lot more I could do if I wanted to. There are things we need to hold on to and things we need to let go.
I consider the important things in my life to be my faith, family and friends and on that I have no regrets at all. They will remain what I value most.
Life is meant to be enjoyed and lived to the fullest and I’ve tried to always make the best of whatever comes my way. I’m very thankful for every day.
Looking on the bright side, the rest of this week is going to be in the 70’s here and that is what I consider to be perfect weather. Not too hot and not too cold. The leaves continue to fall and I’ve had some contented moments just sitting on the porch. Life is good!

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Seafood Bisque Day! Seafood bisque is a delightfully rich and creamy soup made with lobster, crab, shrimp, or crayfish. With the weather starting to get chilly, the celebration of this warm, rich soup couldn’t have come at a better time.
I haven’t made this recipe but it sounds easy enough to do and tasty too.
Seafood Bisque
1/2 c butter, decided
1 lb. medium shrimp, pealed, deveined and chopped
1/2 c chopped onion
1/2 c chopped celery
1/2 cup flour
3 cups water
1 Tbsp. ketchup
1 chicken flavor bouillon cube
1 bay leaf
1 tbsp. seasoned salt
1/8 teasp. cayenne pepper, optional
1 can evaporated milk
2 tablespoons dry white wine or water
Melt 2 tablespoons butter in medium saucepan over medium heat. Add shrimp, onion and celery. Cook stirring occasionally until shrimp turns pink. Remover from pan and set aside
Melt remaining butter in same saucepan. Stir in flour. Gradually still in water, bouillon, bay leaf, seasoned salt and pepper. Bring to a boil, stirring occasionally. Reduce heat to low. Cook, stirring occasionally for 5 minutes
Add shrimp mixture. Cook for 2 minutes. Discard bay leaf. Still in evaporated milk and wine. Heat through. Do not boil.
Makes 6 servings

I've been evaluating my life over the past few weeks and decided I needed to make a few changes, like get on the treadmill more and start volunteering at church. It is good that we have the chance to always change aspects of our lives if we are willing to do so.

I don't know if it's age-related or what, but I've been increasingly introspective these last couple years.
Reading Betty's thoughts, I realized how very fortunate we are ... to have the mental and physical fortitude to make adjustments we feel are necessary.
Todd would love your seafood bisque Pam! I will have to make it for him. I often re-evaluate my life, and try to make the necessary changes. Its not always easy, but I keep trying, and that's what counts! Loved all of your positivity and special perspective on thigs Pam! You are a blessing to many, including me. xoxo
