Life is a Special Occasion!

Today is Sweetest Day which is exists as an opportunity for you to recognize that sweet and special someone. It doesn’t matter who that person is, or what their relation to you. They just have to be sweet in order to get a little recognition.
Herbert Birch Kingston, a Cleveland, Ohio philanthropist and candy company employee started Sweetest Day. He wanted to bring happiness to orphans, shut-ins and under-privileged. His intent was to show these people that they were not forgotten. In 1922, he started this holiday by giving candy and small gifts. He often used movie stars to distribute the gifts.
The popularity of this holiday quickly spread. Today, it is celebrated with loved ones and friends. However, we are encouraged to follow the intent of the original holiday, and find ways to give candy and small gifts to those in need.

I’m sending out XXX’s and OOO’s to all my family and friends today! Happy Sweetest Day! You all are very special to me and I want you to know how much you all mean to me.
It is always a good day to tell the ones you love just how much they mean to you. We get busy and the days fly by so sometimes it’s good to have a day like this to remind us.
I got myself a little present this week to make my work a little simpler. It’s a leaf blower! With all the leaves around here I’m sure it’ll get a lot of use. I’ve been mulching the leaves in the yard so far, but there are lots that blow on the driveway and into the carport and that is where the leaf blower is going to come in handy. Sometimes you just have to be good to yourself too!
It’s the sweet and simple things in life that really make us happy. Try to be good to yourself as well as others and the sweet moments will happen.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Pumpkin Cheesecake Day which celebrates a delicious Fall dessert. In October, pumpkins are literally glowing. So, why not put two of your favorites together - pumpkins and cheesecake! They make a great dessert. They are both nutritious and healthy.
Impossibly Easy Pumpkin Cheesecake
1 can, 15 oz, pumpkin
1 package, 8 oz, cream cheese, cut into 16 pieces, softened
1/4 teaspoon vanilla
3 eggs
3/4 cup sugar
1/2 cup Bisquick baking mix
1 1/2 teaspoons pumpkin pie spice
1 cup caramel topping, if desired
Pecan halves, if desired
Heat oven to 350 degrees. Spray 9 inch glass pie plate with cooking spray.
In blender, place all ingredients except caramel topping and pecan halves. Cover; blend on high speed about 2 minutes or until smooth. Or beat in medium bowl with hand beater 2 minutes. Pour into pie plate.
Bake about 45 minutes or just until puffed and center is dry. Cool completely, about 1 hour. Refrigerate at least 3 hours until chilled. Drizzle servings with caramel topping; garnish with pecan halves. Store covered in refrigerator.

I'd never heard of Sweetest Day, but the back story is heartwarming, indeed. I don't normally crave (or allow myself) dessert, but bring in a cheesecake and all bets are off!
