Today is Friday the 13th, which is believed to be an unlucky day, a day when bad things can happen. Whatever you do, don't walk under a ladder, and don't let a black cat cross your path on this day. Interestingly, there is a sizable number of optimists, who embrace Friday the 13th and the number 13. They shrug off the superstition and go buy lottery tickets with the number 13 in it.

Fridays have always been good days for me. It’s the end of another work week and we can celebrate all we have accomplished. Although it is filled with superstitious beliefs, Friday the 13th has always been a lucky day for me and I’ve never had anything bad occur. I am an optimistic person but don’t go out and buy a lottery ticket. However, I probably should. They say if you don’t buy one you can’t win.
I grew up with a lot of superstitions that had been passed down through the generations. I remember that if silverware was dropped on the floor, it meant company was coming. It was also said that if you break a mirror, seven years of bad luck will follow and when your palm itches, you will come into some money. One, often heard at dinner, was that if all the food on the table is eaten it will be a clear day tomorrow. And if your ears itch or burn, someone is talking about you. Makes one wonder where these superstitions came from for sure.
I’m hoping to finish up the week on a positive note here today. I got a few things done, but would like to accomplish one or two more by the end of the day because tomorrow is looking like a busy day for me.
The weather continues to be very nice for October as we’re to be in the 70’s today and tomorrow.

It’s World Egg Day
This is no yolk. Eggs certainly are what they are cracked up to be. Aside from high cholesterol, eggs are a healthy food. High in nutrition, and low in fat, people all over the world enjoy eggs.
I found this recipe to share today that looks like a winner
Western Omelet Quesadillas
5 Eggs
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup diced cooked ham
1/4 cu diced green bell pepper
1/4 diced red bell pepper
2 tablespoons butter, softened
4 flour tortillas
1 1/4 cups shredded Colby Monterey Jack cheese blend
4 medium green onions, thinly sliced
Salsa if desired
In medium bowl, beat eggs, salt and pepper with a wire whisk. Stir in ham and bell peppers. In a 12 inch nonstick skillet, melt 1 tablespoon of the butter over medium low heat. Add egg mixture. Cook 1 minute, gently lifting edges occasionally with spatula to allow uncooked egg mister to flow to bottom of skillet. Continue to cook, lifting cooked portions until eggs are thickened but still moist. Remove egg mixture from skillet, keep warm. Wipe skillet clean.
Spread 1 to 2 tablespoons remaining butter on each tortilla. Place 1 tortilla in skillet butter side down. Top half of tortilla with one fourth of egg mixture to within 1 inch of edge. Sprinkle 1/4 of cheese over egg mixture. Top with 1 tablespoon of green onions; fold other half over tortilla filling.
Increase heat to medium. Cook quesadilla 2 to 4 minuets turning once, until golden brown and Cheese is melted. Repeat with remaining tortillas, egg mixture, cheese and onions. Serve warm with salsa if desired.

Happy Friday 13th Pam! I have always thought it was a lucky day for me! Love the look of your hash and eggs, and love the sound of those quesdillas! Great stuff! I was born on the 13th, so to me, it's always been a lucky number. My last surgery was on a Friday the 13th, and the doctor actually asked me if I wanted to change it to another day. Nah! I think each day is whatever we make of it, and if we expect good, we'll find it.

Hmmm, that hash looks so good, I might have to cook the corned beef brisket in our fridge real soon just so I can use the leftovers to make hash and poached eggs.
We probably eat more eggs than is wise, but how delicious - and versatile, too!
