Today we celebrate Cuddle Up Day. Cuddle Up Day is an opportunity to snuggle up to someone on a cold winters' day or night. Chances are it's cold outside. So, cozy up to a special someone, and enjoy the warmth and love. This day is enjoyed by both young and old.
Of course, you do not have to cuddle up with someone... Cuddling up in your easy chair is a great idea. Cuddling up to a pet is rewarding. Cuddling up to a stuffed animal is quite secure and comforting. Cuddling up with a good book is enjoyable. And cuddling up by the fireside is warm and cozy.

Winter time is cuddle time. Cuddling up with a good book is always good and then there is cuddling with a sweet grand babe that is a warm and cozy delight.
With the cold weather headed our way this week there will be a lot of cuddling done here at my house. Keeping warm and cozy is a must for me. I can’t seem to take the cold at all any more. Being cold makes me move more slowly than usual and I’m quite slow enough these days.
It’s been a crazy start to this new week for me here as on Sunday my fridge decided it no longer wanted to work. Instead of my usual restful day, I spent the morning cleaning out the fridge and cooking a lot of different things so that they wouldn’t go to waste. My week has been off kilter ever since.
One of the things I made was some Cream Cheese Chicken Chili. It was the first time I’d tried it and it was good. So I’m sharing the recipe.
Ingredients
2 Chicken Breasts
1 Can RoTel
1 Can Corn
1 Can Black Beans, drained and rinsed
1 package 8 oz Cream Cheese, cubed
1 Pack Ranch Dressing Mix
1 T Cumin
1 tsp Chili Powder
1 tsp Onion Powder
Combine all ingredients in crock pot and cook on Low for 6-8 hours. Shred chicken breasts right before serving. I had leftover chicken in the freezer so this is what I used. And I used kidney beans instead of black beans. I also used regular diced tomatoes instead of Ro Tel. Can be served with tortilla chips or over rice.
Things just don’t always go the way we plan and when a major appliance like the fridge quits working you realized just how important they are to your life. I’m spoiled and I like the convenience of my ice maker too. Good thing it got colder so I could store some things in a cooler on the porch.
There is truly never a dull day here at my house, but surprises like that one make you realized how blessed you are when everything works.

Its so cold outside. It just makes me want to cuddle up in warm blankies and be lazy all day.

It always seems that appliances go out when we least expect them to or at the most inconvenient times. You were creative, though, Ma, to be able to put some of the food out in the cooler on the porch. I do like that recipe for the cream cheese chicken; think I will make it as soon as our stuff gets here and I find where my crock pot got packed. It sounds yummy. I too like to cuddle up with a warm blanket and a good book on a cold winter day.
