Happy Soup Swap Holiday everyone!
The United States has such a great love for soup that the whole month of January is National Soup Month! And today is Soup Swap Day! So much soup is cooked during the month of January and during the cold winter season that people just naturally started having soup swaps all over the place. Many different organizations, clubs and churches make it a traditional event each and every year to have a soup swap to raise money for a good cause. Communities have soup swap each winter just as an excuse to get together, eat, trade new soup recipes and catch up on the latest news.

I’m not doing a Soup Swap, but a swap of Soup recipes here at my house today. If you have a good soup recipe to share, please do. Here’s my soup recipe for today
Quick Chicken Soup Recipe - with a little variation
3/4 pound cooked chicken, cut into 1/2 inch pieces
1 cup frozen green peas
2 medium celery stalks, sliced
2 medium carrots, sliced
1 medium onion, chopped
2 garlic cloves, finely chopped
7 cups chicken broth,
* I make mine from bullion cubes added to the broth I cooked the chicken in
1 tablespoon chopped fresh parsley or 1 teaspoon parsley flakes
1 teaspoon dried thyme leaves
1/4 teaspoon pepper
1 dried bay leaf
1 cup uncooked gemelli or rotini pasta
Heat all ingredients except pasta in 4 quart Dutch oven. *I cook my chicken and vegetables in one pot, adding bouillon cubes to the broth. When the chicken is cooked then stir in pasta, reduce heat.
Simmer uncovered 10 to 15 minutes, stirring occasionally, until pasta and vegetables are tender. Discard bay leaf.
Remember: Soup on the whole takes quite well to the deep freeze, but there are exceptions. Cream soups break down disappointingly, and potatoes turn strangely mealy.
Chicken soup with noodles, pasta or rice is one of my winter time favorites and with so much flu and colds going on right now it’s supposed to be good for those too. Thankfully I’ve been staying pretty healthy.
Hopefully, I’ll get out to church later on this morning. They say more snow coming our way. Take good care everyone and stay warm !

I think that's cute with the soup swap, Ma. Never heard of it here but it could be fun to consider for next year. I liked the recipe you posted here for chicken soup; simlar to something we made last week. Stay warm and safe out there with the weather you guys have been having!

The soup swap is a great idea!
Since we're just '2', I'm thinking this is something we could do w/ the neighbors or through the workplace.
We don't get a lot of cold weather in Phoenix, but off-hand I can't think of anything that tastes better and taste the chill off.
