World Food Day is celebrated every year around the world on 16th of October in honor of the date of the founding of the Food and Agriculture Organization of the United Nations in 1945. The day is celebrated widely by many other organizations concerned with food security, including the World Food Program and the International Fund for Agricultural Development.
The World Food Day theme for 2014 is Family Farming: Feeding the world, caring for the earth.
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
Food for thought is no substitute for the real thing.
Walt Kelly
In this day and age there really shouldn’t be anyone that goes hungry. But the sad fact is that there are many that do. Please join me in praying that a way may be found to successfully feed all the poor and hungry in the world. We can all use the most powerful weapon there is, prayer, to work to change hearts and systems, ensuring that all who are hungry may find nourishment, strength, and peace.
Tuesday morning we had a beautiful sunrise. The sky was a brilliant red. DDIL#5 said she saw a purple glow. I thought it looked quite red but the picture I took does look purple. Red skies predict rainy weather and that is what we got.
Pumpkins are quickly becoming everyone’s favorite food and you’ll see DS#3’s crew in the picture at the bottom enjoying some time in a pumpkin patch this past weekend. We all love pumpkin flavored beverages and pumpkin pies so I thought I’d look up something different that I could use pumpkin in and here is what I found.
Pumpkin Pie Steel Cut Oats in the Crock Pot
Here’s a way to enjoy the flavor of pumpkin pie any time of the year, and without any remorse afterward. By adding a dollop of Greek yogurt to the top you’re getting yet another taste sensation while sticking within the boundaries of a healthy breakfast.
These oats are best after they’ve had a chance to sit in the slow cooker for at least 30 minutes before serving and after cooking as they absorb a lot of extra liquid that I don’t like having in my oatmeal.
2 C steel cut oats
1 15oz can of pumpkin
1 14 oz can coconut milk plus enough water to make 4C, I use regular milk
1 tbsp vanilla
1 tbsp plus 1 tsp pumpkin pie spice
1/2 C honey or maple syrup or leave unsweetened and add after it’s been cooked
Put all ingredients in your crockpot. Mix well and set to cook for 5-6 hours on low. Serve hot with milk or a dollop of greek yogurt, extra honey or maple syrup and a sprinkle of cinnamon.
It can be assembled the night before and the slow cooker can cook all night, so you wake up to the fragrant aroma of pumpkin and spices.
If you have leftovers, they keep well in the fridge but can also be frozen in small portions to take out when needed for a quick breakfast.
Serves 6-8
I only had regular old fashioned oatmeal so I used that when fixing this delicious breakfast and cut back a bit on the amount of water used.
I hope you all have a great day ! Happy Thursday !
69 DAYS UNTIL CHRISTMAS
Santa Ma’s workshop is in full swing here… and Autumn's colder nights signal the time for a seasonal bedding changeover. It’s time to check out the linen closets and if new or replacement linens are on the shopping list, be alert for pre-holiday white sales. Warm flannel and fleece bedding can be spotted on sales flyers from now through New Years!
It used to be that all we had here was either single beds or double beds here at my house. Now I have a queen bed in the spare room and my single sheets don’t get used much unless a grandchild comes to visit. It’s good to know I’ve got them all covered !
COUNTING MY GIFTS
Thank you Lord, for happy heart, for rain and sunny weather
Thank you Lord, for this our food and that we are together. Amen
I have counted at least 3 things every day that I'm thankful for 2 years and have now reached 2000 gifts. On my way now to 3000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.
2132. for oatmeal, a hearty and healthy breakfast

How fun at the pumpkin patch! Interesting recipe with the pumpkin and the steel oats. I know I saw pumpkin flavored Oreos the other day at the store :)
The power of prayer can change things indeed, so wise for us to pray that everyone will be fed and no one will be hungry!
betty
I hate that there are starving people in the world today and some of them in our own communities now. It is dreadful when there is truly enough to go around, but in the hands of very few. Praying one day nobody will go to bed hungry, or afraid on in need. Lovely post as always. We have twin beds now and not a double or queen bed in the house. I have kept my bedding with the thought that I will cut them in half and make two, but so far . . . you know the rest of the story! Not been done! Happy Friday! xxoo
