What's all the egg-citement about? Why, today is World Egg Day! World Egg Day is always celebrated on the Second Friday in October
This is no yolk. Eggs certainly are what they are cracked up to be. Aside from high cholesterol, eggs are a healthy food. High in nutrition, and low in fat, people all over the world enjoy eggs.
Don't have egg on your face, by forgetting this special day. We can think of a dozen reasons to enjoy World Egg Day to the fullest. We know eggs-actly how people begin this special day.... with eggs for breakfast. And, there's oh so much more you can do with them.

I do love eggs and use them a lot in cooking and in baking. My favorite way to make them is over easy for breakfast. I often have breakfast for supper too and then I’ll fry up some potatoes and pour a mixture of eggs and a little milk over them, then turn the heat low and cover till the eggs are set, then flip the mixture over to make sure it’s completely done.
I’ve been trying out several new recipes and so I looked for something different I could do with eggs and this is one of the many ideas I found. It sounds like the perfect recipe to keep on hand for those days after Thanksgiving when there will be plenty of leftover turkey and sweet potatoes.
Sweet Potato, Turkey, Egg and Cheese Frittata
6 large eggs
1/4 cup milk
1 cup sweet potatoes, mashed or cubed, already cooked
1 cup turkey breast, shredded
1/2 cup mozzarella cheese
1 teaspoon salt
1 teaspoon pepper
Nonstick cooking spray
In a medium bowl, blend the eggs, salt, pepper, and milk and beat until eggs are fluffy. Stir in cheese and set aside.Spray a large, oven proof skillet, I’ll be using my cast iron skillet, with nonstick cooking spray and heat over medium high heat. Add potatoes and turkey in the skillet, stirring until just warm.Pour eggs over potato and turkey mixture, stirring until eggs just begin to set on the bottom, but are slightly uncooked on top.Turn on oven broiler, and place pan in oven. Cook for 3-4 minutes or until eggs are completely set and top of frittata is lightly golden brown. Cool 5 minutes before serving.
We’ve had a few partly cloudy days now with temps close to 60 degrees and it’s been nice to have a break from the rain. They say it’ll return on Monday so I’m hoping to get out and get a few outdoor chores done like drain the garden hoses and put them away for the year. I always turn the water off to the outdoor faucets too so they don’t freeze up over the winter. Sorry to say they won’t be needed any longer.

I have counted at least 3 things every day that I'm thankful for 2 years and have now reached 2000 gifts. On my way now to 3000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.

I like the way you cook your eggs, Ma, plus the recipe you shared here. I like egg salad sandwiches, might make one today in honor of egg day!

That recipe sounds delicious! I also love eggs--and breakfast for dinner is always a special treat for me.
I love eggs too, any way you cook them. I love quiche best. That little guy with the rake is the cutest.
