World Teacher Day is always celebrated October 5th. Teachers deserve a little recognition, and some thanks and appreciation. Aside from parents and direct family, who else has as much influence on the hearts and minds of a child? Teachers not only educate, but they help to shape and frame your child's beliefs, values, and behaviors.
Parents and students are encouraged to offer thanks and recognition today.

I really can’t say enough about teachers. Having several teachers in our family I do know that they are very hard working and devoted people. They do so much more than spend time teaching in the classroom. The hours spent in preparation and their education is astounding.
We should never forget that parents are the very first teacher any child has and they deserve a big hand too. Working together hand in hand with a teacher they can assure their children the very best education.
I’m always learning something new and am still a student. I was reminded the other day that one of the best sources we have for daily living can be found in the book of Proverbs. We are all called to seek wisdom and knowledge, not from the world’s narrow view but from the Lord’s wider plan and will for our lives.
I’m very grateful for all the teachers in my life and I’m thankful that I can still learn something new every day.

WHAT’S NEW IN THE KITCHEN
I found this recipe on line a few days ago and decided to try it out. I was pleasantly surprised at how good it was so I thought I’d share the recipe with you all today. The blended flavors were delicious!
OVEN ROASTED AUTUMN MEDLEY
1 medium red onion
1½ lbs, 2 small or one large, sweet potato
2 medium apples
2 Tbsp olive oil
1 tsp dried basil
1 tsp dried sage
1 tsp dried rosemary
½ tsp salt
freshly cracked pepper
2 links sausage, I used Polish Kielbasa
handful fresh parsley
Preheat the oven to 400 degrees. Cut the apples and onion into one inch chunks. Peel the sweet potato and cut it into one inch chunks as well.
Place the chopped apples, onions, and sweet potatoes in a large 9x13 inch casserole dish. Add the olive oil, basil, sage, rosemary, salt, and some freshly cracked pepper. Toss until everything is well coated in oil and herbs.
Nestle the sausage, cut into one inch pieces down into the casserole dish. Transfer the casserole dish to the preheated oven and bake for 45 minutes. Stir once and flip the sausage at the 25 minute mark. I found that I had to cover the dish and lower the temp to 350 and bake for about 10 more minutes to get my sweet potatoes soft. It may have been my oven.
After removing the dish from the oven, sprinkle with chopped, fresh parsley if desired.

Let your fingers do the walking... catalog shopping has many advantages over the holiday mall scene. No long lines. No sore feet. No staggering to the car, weighed down by parcels and shopping bags. Shopping becomes a pleasure, conducted from a favorite chair. Phone in your selections, sit back, and wait for the UPS man. Ahhhhh!
COUNTING MY GIFTS

I have counted at least 3 things every day that I'm thankful for almost 2 years and have now reached 2000 gifts. On my way now to 3000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.

When the kids were younger, we would always get lots of catalogs. I would have them go through them and circle what they might want for Christmas, then I would do the majority of shopping that way. It was definitely more relaxed than hitting the mall :)
I like that recipe, Ma, I'm going to try it. The apples in it sound interesting.
I too agree about teachers. They do work hard and are devoted to their students. I think they also need to be paid more than they are paid too.

We don't really get Christmas Catalogues over here, but we did get them when I was a child and they were always well worn out by the time Christmas Came around!
I was very lucky as a child to have, for the most part, wonderful teachers. I am very grateful for them and all that they taught me.
