Smashing news - October 26 is National Pumpkin Day! Pumpkin flavored everything is popular this time of year since pumpkins ripen when the weather starts to turn. The cold weather means pumpkin flavored coffee, cheesecake, and pies. When you pick up your pumpkins for carving, grab an extra so you can actually cook it! Pumpkins are very nutritious and their sweet flesh means kids won’t know you’re feeding them something healthy. Spices like cumin, turmeric, paprika or chipotle powder can turn your pumpkin into a trip around the world.

Pumpkins are so festive this time of year. There aren’t any real ones here at my house but there are several decorative pumpkins here. I have cooked my own pumpkin, but most of the pumpkin I use is out of a can. Basically, I take the easy way out.
Did you know that pumpkins are very good for you. Pumpkins are an antioxidant and an anti inflammatory food! This means it helps with joint health, organ health, stress relief and soft tissue injuries!
Pumpkins can help protect the eyes from cataracts and degeneration with their Vitamin A content. The high levels of Vitamin C help the immune system and encourages collagen production for the skin to maintain its beautiful glow and elasticity.
Pumpkin is a great source of fiber to help wash out any toxins and keep your body running smoothly. Pumpkins hold enough carotids to give them their lovely orange color and help prevent premature aging and cardiovascular disease.
Pumpkin seeds are high in protein and plant based fatty acids, which help regulate cholesterol levels, protect against arthritis, promote healthy skin, and improve brain function. The pulp and the seeds are rich in magnesium required for bone and tooth health.
Pumpkin contains lots of potassium and zinc to prevent the onset of cardiovascular disease and hypertension, high blood pressure. Zinc is also great for the immune system, skin and fertility.
The fruit contains L tryptophan, a chemical compound that triggers feelings of well being that aid depression in a smooth and natural way.

The weather here has taken a swing for the better and we’ve had mostly cloudy days but with some bright sunshine peaking out now and then. Tomorrow they say we might be in the 70’s. Maybe this is our Indian Summer. We have had some frost and November will soon be here. This hasn’t been the nicest October that I can remember, but then it isn’t the worse either.
The pictures today are of my Sunshine boys carving pumpkins last year. What fun !

I have counted at least 3 things every day that I'm thankful for 2 years and have now reached 2000 gifts. On my way now to 3000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.

Great pictures of pumpkin carvers, Ma! Hard to believe we turn the clocks back next week! I didn't realize pumpkins were so good for us! I might have to incorporate pumpkin into some of our meals!

Oh Pam, the sight of your lovely little pumpkin carvers did my heart good. How delightful. I learned ever so much about Pumpkin from you today Thanks! There is a shortage of pumpkins over here this year due to a very rainy August. They are rotting in the fields. Far too wet. It's not a crop that does very well here anyways. I'd no idea there were so many heath benefits to pumpkins! Maybe if I show this to DH, he'll agree to try some pumpkin bread or pie. I mean, who doesn't love pumpkin? That's practically un-American! :)
