Today is National Macaroon Day which celebrates these small unleavened cakes with a crispy outer layer and a moist chewy center. Although they are same size of cookies, macaroons do not contain flour and therefore do not fall not that that classification. the most popular macaroon varieties are coconut, almond and chocolate.
Culinary historians believe that macaroons originated in Italy, in fact the word macaroon comes from the Italion word paste: macarone. A primary ingredient in early maroon recipes was almond paste.
In 1533 Italian monks and nuns introduced macaroons in France. Two benedictine nuns, Sister Marguerite and Sister Marie - Elizabeth , began baking and selling this small sweets to help pay for their housing. The became known as the Macaroon Sisters and their baking became famous throughout Europe.
To celebrate today, buy some macaroons or bake a homemade batch to enjoy!

I did cook for the weekend and today will be enjoying some chicken stew which is perfect for the chilly temps we’ve had this weekend. I like to have biscuits with my stew and also baked up some refrigerated ones I had on hand. So before I forget here is the recipe:
Skillet Chicken Stew
1/3 c. flour
1/2 tsp salt
dash pepper
1 1/2lbs bonesless skinless chicken breasts cut into 1 inch pieces
3 tbsp butter
1 onion, sliced
3 ribs celery, sliced
2 potatoes, peeled and cut into 3/4 inch cubes
3 medium carrots , cut into 1/4 inch slices
1 c. chicken broth
1/2 tsp. thyme
1 tbsp. ketchup
1 tbsp corn starch
In large shallow dish , combine flour salt and pepper. Add chicken a few pieces at a time and turn to coat.
In large skillet melt butter, cook chicken until juices run clear. Add onion and celery, cook 3 minutes. Stir in potatoes and carrots.
In small bowl combine broth, thyme, ketchup and cornstarch; stir into skillet. Bring to boil. Reduce heat, cover and simmer 20 minutes or until vegetables are tender.
Makes 6 servings
I also have a recipe for macaroons. I do love coconut and they’ll make a great dessert.
First Place Macaroons
1 1/3 sweetened shredded coconut
1/3 c. sugar
2 tbsp flour
1/8 tsp salt
2 egg white, room temperature
In a bowl, combine coconut, sugar, flour and salt. Add egg whites and mix well.
Drop by rounded teaspoonfuls onto a greased baking sheet. Bake at 325 degrees for 20 minutes or until golden brown. Cool on wire rack.
makes about 1 1/2 dozen
