Today is Blueberry Pancake Day which are nutritious enough for breakfast, tasty enough a midday snack, easy enough to make for dinner.
To make blueberry pancakes, mix up a batch of your favorite plain pancake batter. Wash the blueberries, pat them dry and keep them in a separate bowl. Once you’ve poured the batter onto the griddle drop a few blueberries on top. This will ensure that your blueberries aren’t bruised during the cooking process and and be perfect bursts of flavor when you bit into your pancakes.
Make a delicious batch of pancakes today and top them with a little blueberry maple syrup and celebrate National Blueberry Pancake Day!

Blueberries are very good and good for us. These berries are an antioxidant supper food. They are high in potassium and Vitamin C, making them the top choice of doctors and nutritionists. Not only can they lower your risk of heart disease and cancer, they are also antiflainatory. They say we should eat 1/2 cup of them daily.
Blueberries are always available at our grocery store and don’t cost much either so why not have some today. It’s hard to believe that something that tastes so good can actually be good for you too.
I don’t happen to have pictures of blueberry pancakes today but I do have some of regular pancakes and with that said, I think I’ll be having some for breakfast today. Just writing about them have made me hungry for them.
DD called yesterday evening to say they have my car back at their house from the garage and it did have 3 leaks in the break linings. Now DSIL has to replace the back breaks and I should have it back home before the weekend. And she said they and DS#2 would be covering the cost for me. I didn’t expect that and am very thankful for their generosity. My children all take such good care of me. I’m a very thankful mom.
I also talked to DS#6 and he says that things are moving right along on the purchase of their new home and the sale of their old one and they are busy packing now. Good to know all is going right for them right now and all is progressing smoothly. Being so far away there’s not a lot I can do to help but am willing to do what I can and some food may be in their future. That’s one thing I can help with. I’ve always made what the kids call a moving sub sandwich for those moving in the past and can keep up the tradition.
I make them with a large loaf of uncut Italian bread sliced down the middle. Then spread creamy Italian dressing on the bread and layer with ham, balogna, turkey, salami and a couple of different kinds of cheese. Then add slices of red onion and tomato. I wrap them up and refrigerate over night so the flavors can meld together then slice it and serve with some macaroni salad and a fruit salad. He’ll be letting me know when they’re ready for it.

Yum on the pancakes and that sandwich you make, Ma! So simple with it, but I bet so tasty and so appreciated when one is moving! Glad to hear your car will be returned to you so very soon and so thankful for your children's generosity! That I am sure is a relief! What a generous gesture on the part of DD and DS#2! You certainly raised 'em right (*smile*) Moving a household's sure not without a bit of stress. Yours is sure a nice tradition, and I'm going to remember that tip about wrapping and refrigerating overnight. Yum!
Oh my those pancakes look soooo good. Happy to hear your kids are there for you and of course you are there for them as family should be. It is a blessing to have.
