ON THE BRIGHT SIDE
FOR SATURDAY, JANUARY 25TH, 2020
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!!
Hallmark
Today is the first day of the Chinese New Year which is the most important holiday in China when millions of people travel home to be with their families. The Chinese New Year is full of dragon dances, fireworks, feasts, gift giving and lantern festivals. Red is the traditional color because it symolizes luck and prosperity. Many will paint their doors a right scarlet to bring good fortune in the year to come.
According to tradition, each year of the Chinese calendar is associated with one of the twelve signs of the zodiac: signs: rat ox, tiger, rabbit, dragons, snake, horse, sheep, monkey, dog, rooster or pig..This year is the year of the rat.
To celebrate the occasions adorn your home with glowing paper lanterns and do a little house cleaning to sweep away an bad luck. Happy Chinese New Year!
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
Good health, good luck and much happiness throughout the year.
Since it’s Chinese New year I thought I’d cook up some Chinese food to celebrate! Food plays and important role in the Chinese New Year and certain foods have symbolic meanings of luck.
Eating Longevity noodles are special fords as they symbolized that everything is going to be smooth in the coming year. So that is what my recipe is for today. The longevity noodle is made by one single continuous noodle and you must eat it from the beginning to the end and don’t break it while eating or the good wish will be broken.
Long Life Noodles
5 Tbsp. grapeseed oil
4 1/2 c. sliced maitake mushrooms
salt
1 c. finely sliced scallions
1/4 c. scallion greens reserved for garnish
1 1/2 tbsp. minced garlic
1 1.2 tbsp. minced fresh ginger
2 c. sliced carrots
2 c. sliced zucchini
1 1/2 cu thinly sliced red bell pepper
8 lightly packed c. watercress
8 oz. fresh Shanghai or lo being noodles, cooked until al dente, then rinsed
1 Tbsp.soy sauce
1/2 c. vegetable stock
2 1/2 Tbsp. lemon juice
ground black pepper
1 Tbsp. sesame oil, for drizzling
Heat 3 tbsp. of grapeseed oil in a wok or large deep skillet over medium heat and swirl to coat pan. When the oil shimmers, add the mushrooms, turning occasionally until golden brown .Transfer to a plate lined with papertowls and salt generously.
Add remaining 2 tbsp. oil to pan. Add the scallions, garlic and ginger. Cook staring constantly until just fragrant, about 30 seconds. Add the carrot, zucchini, and bell pepper. Cook stirring frequently until vegetables begin to soften. about 2 minutes Adde the watercress and cook until it starts to wilt, tossing frequently, about 1 minute.
Lower heat to simmer, add the mushrooms, noodles and soy sauce and stock. Cook, tossing frequently until mushrooms and noodles are heated through, about 3 minutes.
Add lemon juice and season to taste with salt and pepper. Transfer to a large platter, drizle with sesame oil and garnish with reserved scallion greens and serve.
I must say that red is my favorite color so it will be no problem for me to dress in red to celebrate today. Today’s pictures are from our New Year celebration at DS#4’s house this year. It was a special occasion as most of my family was together for the celebration. We all opened up a fortune cookie to see what to expect in the coming year.
I hope you all have a FANTASTIC Friday!
COUNTING MY GIFTS
Just as you usher in lights, lanterns and other forms of illuminations to welcome the New Year, May the New year usher in for you new hopes, dreams and aspirations.
Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.

Wishing all a very prosperous and happy New Year!
Thanks, and Happy New Year to you! Yours was a neat 'fortune.'
I can see why red's your favorite color … you look great in that fleece top. Not sure what's happening in that first photo, but it fairly shouts, "Here's to good times!" I like the idea of a longevity noodle. It makes me think of the classic spaghetti scene in Lady and the Tramp.
I hadn't heard of those longevity noodles but I do like the concept of them! Happy Chinese New Year to you, Ma!! People were talking about the year of the rat today on the news :)
