Today is National Peanut Butter Day which is a popular household food. The average person consumes more that six pounds of peanut products each year. In 1923 Heinz became the first company to homogenize peanuts into the spreadable butter we know and love today.
It takes 550 peanuts to make a 12 ounce jar of peanut butter. Peanuts are cholesterol free and an excellent source of protein. It’s the high protein content that causes peanut butter to stick to the roof of your mouth.
To celebrate today, make some peanut butter cookies , spread some tasty peanut butter on toast or enjoy a spoonful right out of the jar.

I love peanut butter and the many ways you can use it. Whether it is used in baking or as a spread it is good and good for you too. I had some peanut butter on crackers along with my banana for breakfast this morning.
Peanut butter and jelly sandwiches always hit the spot and have them often for lunch. They are quick and easy and always satisfying too. That covers breakfast and lunch but I looked for and found something to fix with peanut butter for dinner. It’s not usually a time I’d have it unless it was in a dessert.
Peanut Chicken and Cabbage Slaw
Makes 1 serving
1 tbsp. vegetable oil
1 boneless skinless chicken breast.
salt and ground pepper
2 tsp. rice vinegar
1 tsp. sugar
1 tsp. toasted sesame oil
1 c. shredded cabbage
2 scallions, thinly sliced
1 small carrot shredded.
1 tsp grated peeled fresh ginger
1 tbsp. smooth peanut butter
1 tsp. soy sauce
In small skillet heat oil over medium. Season chicken with salt and pepper. Cook unti lbrowned and opaque throughout, about 6 minutes per side.
Meanwhile make slaw; In a medium bowl, whisk 3 tsp vinegar, sugar,,and sesame oil. Add cabbage, scallions, carrot and ginger. Toss together and set aside.
Make sauce: in a small bowl stir together peanut butter, soy sauce, and remaining teaspoon of vinegar. If necessary, thin with water.
Mound slaw on serving plate. Thinly slice chicken crosswise on the diagonal. Place alongside slaw, spoon a little sauce on plate and serve with remaining sauce on the side.
It seemed as though most recipes with peanut butter or peanuts were Oriental. I’ll be putting this on my list to try out soon. Rice vinegar, fresh ginger and toasted sesame oil are not somthing I usually have on hand . But there is always a jar of peanut butter in the cupboard..

(Gotta be) JIF has been my guilty pleasure for so many years; except I enjoy the crunchy variety. I once had a boss who teased me about "eating so much fat." Without thinking, I retorted, "But just look at my shiny coat." Good to know it's actually beneficial! Happy Friday!
That peanut chicken and slaw recipe was interesting! I like peanut butter sandwiches but haven't had one in probably about 2 years. I learned something new today with why peanut butter sticks to the roof of one's mouth and also how many peanuts it takes to make a 12 ounce jar. I can imagine people counting them out as they were making the peanut butter :)

I've always loved peanut butter, and for the past few years, the kind with honey in is has become my favorite. Man, a LOT of peanuts have given their lives for my pleasure over the years... :)
