Today is National Maple Syrup Day which is a day to enjoy some Maple Syrup in your favorite way. It can be used as a topping on pancakes, waffles, or vanilla ice cream.
Native Americans were the first to harvest and boil the sap of the maple tree into a thick syrup, a process that was documented and adopted by early settlers in the 1600’s. Tapping a maple tree does no permanent damage to the tree and only 10% of the sap that is produced in a year is actually collected Many maple trees have been tapped for 150 years or more. It takes 30 to 50 gallons of sap to make one gallon of maple syrup. It can also be boiled down to produce maple cream, maple sugar and maple sugar candy.

Other than over pancakes and waffles, one of my favorite ways to enjoy Maple Syrup is on top vanilla ice cream It’s a unique taste and I really like it. There are several Maple syrup farms here in our area that have it for sale, but really you’ll find it in any grocery store. It comes from many different places but they say the largest producer is Canada where the largest supplier produces over 5 million gallons of it each year
Today’s recipe is for Maple Syrup Granola Bars.
Instead of Maple syrup pictures today I’m sharing some pictures with Santa pictures I received the week. Looks like everyone was having fun.
Maple Nut Granola Bars
6 cups rolled oats, not instant
1 c. pecans
1 c. sliced almonds
1 c. walnuts
1 c. brown sugar, slightly packed
3/4 c. pure maple syrup
1/4 c. honey
1/2 c. unsalted butter
1 tbsp. cinnamon
1 tsp salt
1/2 tsp. nutmeg
1 tsp. vanilla
Preheat the oven to 350 degrees . Lightly toast the nuts 8 to 10 minutes.
Mix together the cinnamon, salt and nutmeg in a small bowl. Melt the stick of butter on low heat in small sauce pan.
In a large bowl, toss the oats with the melted butter and spice mix. Spread the mixture out on 2 baking sheets and toast in oven for 15 to 20 minutes, shaking the pan twice and making sure they don’t burn. Remove from oven and set aside.
Reduce the heat to 325 degrees.
In a medium sauce pan combine brown sugar, maple syrup, and honey; Heat slowly stirring until all is combined and sugar has melted. Stir in vanilla.Toss together the toasted oats and nuts. Slowly pour in the warm syrup mixture. stirring as you pour. Toss the mixture to fully incorporate the syrup.
Line one baking sheet with parchment paper and evenly press the mixture into the pan. Cover the pan with another sheet of parchment paper and use it to smooth out the mixture into the pan. Once smooth remove top sheet.
Bake the pan for about 20 minutes until granola is aromatic and deep gold in color. Rotate pan halfway through. Remove from the oven and allow to cool completely . Using edges of parchment, lift the entire sheet of granola from the pan. Cut into 8 strips lengthwise by 4 strips wide.
These will beat any store bought ones you’ll ever have.

Maple syrup can't be beat when it comes to toppings...
Interesting information about the syrup. Love learning new things.
Hmmmm … there's a wee bottle of 'real' Maple Syrup sitting in my cupboard that a co-worker brought me from Massachusetts a few years ago. Tho' it was unseasonably warm yesterday and the night restless (tornado watches) it's supposed to turn sharply cool in the coming hours. I've not tasted Malt-O-Meal in decades, but that's just what came to my mind with a drizzle of the maple syrup.
How cute with all the visits to Santa! I hadn't though of putting maple syrup on vanilla ice cream! I bet it is delicious! Will try it in the spring and summer when I start eating ice cream again :)
