Life is a Special Occasion!
Today is National Fritters Day which honors the delicious fried cakes filled with fruit or meat. They can be a snack, a side dish, dessert or even the main course.
There is not much difference between pancake batter and fritter batter. It is only once fruit or meat is dipped into the batter that it becomes a fritter.
The first historical record of the fritter dates back to 1665. Samuel Pepys, an Englishman who served as a member of Parliament during the English Restoration period, noted in his diary that he would be enjoying some fritters before Lent.
To celebrate, try making your own tasty fritters to enjoy.
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
I found a recipe for some honey drenched Chrismas fritters to enjoy and thought I’d share it with you
24 frozen yeast Dinner rolls, thawed
Zest of one lemon
Juice of half a lemon
1 cup honey
1/2 cup sugar
Vegetable oil for frying
Cut half the Dinner rolls into eight pieces. Cut the remaining half into sixteen pieces. Roll the pieces to form small balls.
Fry the balls of dough in oil on medium low heat for about one minute or until baked inside. Then place balls on a baking sheet covered with paper towels to let drain. When all dough is fried and drained place in a bowl.
Combine lemon zest , juice, sugar and honey in a pan and heat until mixture is runny and sugar is all blended. Remove from heat and pour the balls of dough in the sauce pan, then gently stir until all are evenly coated.
Arrange coated dough balls on a cone or bundt shape and top with decorative sprinkles.
I haven’t made these Christmas fritters, but I have pictures to show of my lunch with my daughter last week. My sister and her oldest daughter also came along. The sign at the top was in the resturant’s restroom and I had to take a picture of it too.
