Life is a special occasion!!
Today is Bake Cookies Day which is a great excuse to bake some delicious cookies to help get you through the cold winter days. Why not try some cinnamon flavored cookies such as snickerdoodles to get your kitchen smelling of winter festivities. Or there is the classic sugar cookie with brightly colored icing, silver candy balls and sprinkles, cut into a myriad of seasonal shapes.
Today is an excuse to indulge in the art and eating of cookies of every strip and measure, especially those that remind you of the season.
Cookies arrived in America in the 17th century although the word arrive much later with the Dutch in it’s original form of kookie, meaning little aake. This was soon shortened to cooky or cookie. From fruit filled cookies to the simple sugar cookies, theses little cakes are simply the most amazing thing to come out of an oven since bread.
Today is the day to get everything together and fill your house with the joy of the holidays. Bake cookies.
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
One of my favorite Christmas cookes to make is Thumprints and I’m sharing the recipe for them today.
Basic Thumbprint Cookie Recipe
3/4 c. butter softened
1/2 c sugar
2 egg yolks
1 tsp vanilla
1 1/2 c. flour
In a large bowl beat butter with a mixer on medium. Add sugar and beat until combined. Beat in egg yours and vanilla until combined. Beat in flour. Chill covered 1 hour or until dough is easy to handle.
Preheat oven to 375 degrees Grese a cookie sheet. Shape dough into 1 inch balls. Roll in desired coating. Place balls 1 inch apart on prepared cookie sheet. Using you thumb make an indent in the center of each ball.
Bake 10 to 12 minutes or until bottoms are light brown. If centers puff up during baking repress with round side of a measuring spoon. Remove cookies’ let cool before serving., fill centers with desired filling. Makes 30 cookies.
I usually roll my cookie balls in the egg whites, then in chopped walnuts and fill the centers with jam . You can use whatever you’d like .
When the family was home I used to start baking weeks ahead and make many different kinds, but this year I won’t be making any as I’m going to be away from home. Maybe we can all make cookies together when we get there. That would be loads of fun. Just in case, I’ll bring my favorite recipes.
This week has been all abut the wrapping and packing here at my house Thankfully DS#5 and DD have volunteered to take some things down for me in their cars. I am flying and there won’t be enough room in my carry on to take it all.
I’ll leave the day after Christmas and won’t be back untill the 2nd week in January. I’ve notified the park office and they’ll keep an eye out while I’m gone.
But I’ll have my trusty laptop and will be able to let you know what we’re doing and will hopefully have a lot of new pictures to share!
