ON THE BRIGHT SIDE
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is Croissant Day which is a good reason to have a croissant for your breakfast. The crescent shaped flakey and buttery pastry is made by layering and rolling out leavened dough. While it can be consumed plain, many variations exist. Bakers often bake croissants with chocolate, fruits, meats, vegetables and cheese. Many people use them to make sandwiches like egg salad, tuna and cheese and ham sandwiches.
Contrary to popular belief they are not French in origin. Food historians believe that the Austrian Kipferl is the ancestor of the present day croissant. Legend has it that the Kipeferl, which is the German word for crescent, was created by some Viennese bakers as a way to celebrate the defeat of Ottoman invaders by the soldiers of Vienna. The bakers according to the story, fashioned their new creation in the form of the crescent they saw on the enemies flag.
It is thought that the pastry was popularized in France by Marie Antionette, the last queen of France.
To celebrate National Croissant Day warm up a delicious croissant and enjoy it with a generous helping of butter. Yum!

I do like croissants and thankfully we have an easy way to make them. All I have to do is open a refrigerated tin of crescent rolls and put them on a baking sheet and pop them in the oven. There are whole cookbooks full of recipes on things you can make with the popular refrigerated crescent rolls. So today I sharing one I found that is a favorite of mine.
Ham and Cheese Crescent Roll Ups
1 can refrigerated crescent rolls
8 thin slices Swiss Cheese
1/4 lb. deli sliced ham
1 tbsp butter melted
2 tsp honey
Heat oven to 375 degrees. Spray large cookie sheet with cooking spray or line with parchment paper.
Unroll crescents and press into a 12 by 8 rectangle, pressing seams together. Top with these and ham slices, leaving 1/2 inch border on the short ends. Starting on short edge of rectangle, roll up tightly and since seam together. With a serrated knife, cut into 8 slices.about one inch wide. Arrange on cool sheet and brush tops and sides of roll ups with melted butter. Bake 17 to 20 minutes until golden brown.
Drizzle with honey; serve warm.
You can try sliced Cheddar or Pepper Jack cheese in place of Swiss Cheese for a different flavor. Serve with chips and fresh vegetables for a complete meal. They keep well refrigerated and can be heated to enjoy a second time.
I do love leftovers! These would also make a great breakfast sandwich. Lunch today and breakfast tomorrow!
I also love Croissant breakfast sandwiches that are made with bacon egg and cheese. You simply cut a croissant in two and top with an egg, a couple of slices of bacon and a slice of cheese. You put them in the oven and warm until the cheese is melted. The pictures above of a croissant breakfast sandwich that I got at Burger King a while back.
Sadly I have neither here today, croissants or crescent rolls. I do however bacon, eggs and cheese. I’m staying in and keeping warm here and making do. They say we’re to have a high of a minus 4 degrees here and nothing is going to get me outside. I’m thankful that I don’t have to go out and keeping those that have to work out in the cold today in my prayers.
On the bright side we’re to be up to a balmy 35 degrees by Saturday and I do hope to get out then and go to a basketball game that our Mr. Wonderful is playing in. We’ll see...
Keep warm and be safe !
I hope you all have a WONDERFUL Wednesday!

ADVICE FOR TODAY
You don’t have to do everything from scratch. Nobody wants to make puff pastry.
