Today is also International Tolerance Day which is an annual event, celebrated around the world. It was created and is sponsored by UNESCO. The United Nations is committed to strengthening tolerance by fostering mutual understanding among cultures and peoples. This is especially needed in these times of war, terrorism, and disregard for human life.
Countries around the world celebrate this day, by holding conferences, fairs and other events to teach the meaning and importance of tolerance, and encourage individuals and groups to practice tolerance, respect and dignity.

This DIL’s birthday is another one of my long distance celebrations and as usual a card went out in the mail to wish her a very Happy Birthday! I was able to visit with her last Thanksgiving and it was a trip, I’ll never forget. The picture above was taken then as we all enjoyed some delicious cupcakes! That was one holiday I was able to celebrate with my out of state family and then again here in Ohio with those that live here. That was a rare occasion for me.
It would be great if my family all lived close by, but that is not to be. Thankfully I do get to see them in person every now and then and try to make up for lost time when I do.
It’s looking like windy day here today with some cloudy skies coming our way and temps will be in the low 40’s. Every day brings us a little closer to Thanksgiving now and plans are being made for our family celebration to be on Saturday, November 25th at DS#5’s house. I’m looking forward to seeing most of my family together but still there will be some that won’t be able to make it in as distance makes it impossible at times.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Fast Food Day! The concept of ready cooked food for sale can be attributed to the Ancient Romans. In many cities, street stands offered hot sausages, bread, and wine to patrons on the go. Thousands of years later, in 1867, the first American fast food restaurant opened in New York. It was a hotdog stand on Coney Island!
Today, fast food is an American staple. There are over 300,000 fast food restaurants in the United States alone, making it nearly impossible to drive down the road without going by at least one fast food chain restaurant.
I love fast food and by that I mean that every thing I make these days is something quick and easy to fix. I rarely have something from McDonald’s or Burger King, but when I do I consider it a real treat. I do like McDonald’s Bacon Egg and Cheese Biscuit meals.
Most of the time though I cook at home and so I thought I’d share fast food recipe that you can make at home today.
Home Made Chc Fil A Sandwiches
Kosher salt
Sugar
2 large boneless skinless chicken breasts, split horizontally into 4 cutlets
2 teaspoons paprika
2 tablespoons black pepper
1/2 teaspoon cayenne pepper
1 teaspoon powdered MSG, optional
1 cup milk
2 large eggs
1 1/2 cups flour
2 tablespoons powdered nonfat milk
1 teaspoon baking powder
2 quarts peanut oil
4 soft hamburger buns, toasted in butter
8 dill pickle chips
Dissolve 1/2 cup kosher salt and 1/4 cup sugar in 1 quart of cold water to make a brine. Place in a plastic zipper lock bag and add the chicken breasts.. Transfer to refrigerator and let sit for at least 6 hours and up to overnight.
Meanwhile, combine paprika, black pepper, cayenne pepper, and MSG if using, in a small bowl. Set aside
Whisk together milk and eggs in a medium bowl. Set aside.
Combine flour, nonfat milk powder, baking powder, 1/2 teaspoon kosher salt, 2 teaspoons sugar, and 2 tablespoons of spice mixture in a large bowl and whisk. Drizzle 3 tablespoons milk and egg mixture into flour mixture and rub with fingertips until the flour mixture is coarse like wet sand.
In a large wok, deep fryer, or Dutch oven, preheat oil to 350 degrees
Remove chicken breasts from brine and pat dry with paper towels. Season on all sides with remaining spice mixture. Transfer to milk mixture and turn to coat. Working one cutlet at a time, allow excess milk mixture to drip off then transfer to flour mixture. Turn to coat, pile extra mixture on top of cutlet, and press down firmly to adhere as much mixture as possible to the meat. Lift cutlet, shake off excess flour, then slowly lower into hot oil. Repeat with remaining breasts.
Cook, turning breasts occasionally until golden brown and crisp on all sides, and chicken is cooked through, about 4 minutes total. Transfer to a paper towel lined plate.
Place 2 pickles on each bottom bun and a fried chicken cutlet on top. Close sandwiches, then cover with an overturned bowl or aluminum foil and allow to rest for 2 minutes to steam buns. Serve immediately.

True, it's hard on the heart when dear ones are unable to be together on holidays.
It's still in the mid-80's here in Phoenix; difficult to think Thanksgiving is but a week away!
