There is doubt about it that the most wonderful time of the year is also often the most stressful. The holiday season may bring lots of joy, but it can also mean coming to terms with the endless to do lists we all have. The result is too much stress, too little gratitude.
We need to remember that stress is not something that happens to us, but how we respond to our circumstances. Take it one day at a time, try and keep things simple and count your blessings. When you think about what you have instead of what you don’t have it makes you feel more peaceful and content.
Whatever you do, or don't do, in the days and weeks ahead, just remember that for all that is wrong in the world, there is much more that is right, and that's something to truly be thankful for.
The leaves continue to fall here at my house and as this might possibly be the best day of this week I’m going to get out and mulch those leaves again. It’s only going to be around 45 degrees outside and the days are going to continue to get colder. It’ll be interesting to see how long it will take for all the trees around me to shed their leaves once and for all.

It’s National Pickle Day!
Pickles have been a popular food for thousands of years. In 2030 B.C., cucumbers were imported from India to the Tigris Valley. There, they were first preserved and eaten as pickles.
In ancient Egypt, people consumed pickles for their nutritional value and because they were thought to enhance beauty. Cleopatra attributed her good looks to her full diet of pickles. Centuries later, Napoleon believed that pickles offered health benefits for his armies, so he offered a huge cash prize to anyone who was able to preserve them safely.
Today we honor the culinary history of pickles. This versatile vegetable can be enjoyed as a condiment, snack, or side dish
When I was growing up my mom usually had a relish dish she would put on the table when serving a meal and it always included pickles. She often made her own homemade pickles too. The recipe below is not hers but one I found on the internet, but it sounds pretty good too.
Easy Refrigerator Pickles
6 cups thinly sliced cucumbers
2 cups thinly sliced onions
1 1/2 cups sugar
1 1/2 cups cider vinegar
1/2 teaspoon salt
1/2 teaspoon mustard seed
1/2 teaspoon celery seed
1/2 teaspoon ground turmeric
1/2 teaspoon ground cloves
Place cucumbers and onions in a large bowl; set aside. Combine remaining ingredients in a saucepan; bring to a boil. Cook and stir just until the sugar is dissolved. Pour over cucumber mixture; cool. Cover tightly and refrigerate for at least 24 hours before serving. Yield: 6 cups.

Lots of leaves you have been working on with lots more to go. I bet it will be a good feeling when it is all done. How cute with it being National Pickle Day.

I like the idea of letting go day. I think we stress ourselves out too much these days. We are living in an amazing time, with so many modern amenities, but we are far too stressed. Thankfully we don't have a lot of leaves here, but I have noticed for the most part people don't do a lot of raking. I am not sure why. Perhaps because we don't really get snow so the leaves are able to rot naturally into the ground. Your refrigerator pickles look very good. I love pickles. Oddly enough they don't do a lot of pickles over here. I miss sweet mixed pickles! I used to love the pickled cauliflowers in them! Have a lovely Tuesday! xoxo
