THOUGHT FOR TODAY
It’s nice to be important, but it’s more important to be nice.
It seems we are celebrating back to back birthdays here with DDIL#1 yesterday and a granddaughter’s today. Our little sweet sugar AB and her sister, our Cutie Patootie, both have November birthdays and I’ll get to celebrate with them at their party this coming Saturday.
The time is always right to be kind and on Kindness Day, even more so. It’s a gift we can all give that don’t cost a cent but means a million to others when we share it.
It’s looking like a cloudy day here today so having a special reason to celebrate this holiday and a birthday makes things a whole lot brighter for sure. I had a rest filled Sunday so I’m ready for the week ahead.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Indian Pudding Day which is a day to enjoy puddings created by native American Indians.
It seems appropriate to hold this day in mid November, as we approach Thanksgiving. Native American Indians were very much a part of the first Thanksgiving feast. It is quite likely that
these puddings were served, and enjoyed, at that first Thanksgiving.
American Indian puddings are defined as a number recipes of native American Indian origin. Generally, they include molasses and cornmeal. Apples were often an ingredient and they were usually baked.
Apple Cider Indian Pudding
1 cup milk
2/3 cup yellow cornmeal
3 cups apple cider
1 large egg, beaten lightly
1/2 cup firmly packed light brown sugar
1 teaspoon cinnamon
1 teaspoon salt
1/2 stick butter, cut into bits
1/2 cup raisins
vanilla ice cream as an accompaniment
In the top of a double boiler set over simmering water scald 1/2 cup of the milk. In a bowl whisk together the cornmeal and the cider, stir the mixture into the scalded milk. Cook the mixture, stirring occasionally, for 20 to 25 minutes, or until it is thickened. The mixture may appear slightly curdled.
Remove the pan from the heat, whisk in the egg, the brown sugar, the cinnamon, the salt, the butter, and the raisins, and pour the mixture into a buttered 13 by 9 inch baking pan. Whisk in the remaining 1/2 cup milk and bake the pudding in the middle of a preheated 325 degree oven for 1 hour. Serve the pudding warm with the ice cream.
