Today is Paul Bunyan Day! Paul Bunyan is one of the best known heroes in American folklore. This legendary lumberjack and his faithful companion Babe the Blue Ox, starred in many of the tall tales told in the Midwest during the 1800s. According to the stories, Bunyan was a huge man with an amazing
amount of physical strength. He single handedly founded the logging industry, cut down whole forests in North Dakota, created Lake Superior with his bare hands, and even trained carpenter ants to help him with his tasks!

I love folklore and stories of times in our history and it’s heroes. There was a time when many told stories for entertainment. They didn’t have TV or even a radio to listen to. And the many stories were exaggerated over time and became known as tall tales. These classic stories are not only highly entertaining, they often play an important role in passing along core values or character traits.
I think story telling is a good way to pass on our family traditions and customs so it’s important that we keep on telling the stories of times gone by. Every family has a funny tale or two to tell and I love it when my children get together and tell their stories of what is fondly called the good old days.
The pictures today of the campfire we used to have when we camped. There were a lot of good stories told there and many of them were quite tall tales!
Today is supposed to be a spectacular day they say. Warming up to 80 degrees and sunny. I’ve got some errands to run so I’m going to take advantage of a beautiful day!

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is Tapioca Day!
Tapioca is a starch extracted from the cassava root and is used in culinary applications as a thickener and binding agent. For me it means pudding!
FLUFFY TAPIOCA PUDDING
6 cups milk
1 teaspoon pure vanilla
6 tablespoons quick cooking tapioca
1 1/2 cups sugar, divided
4 eggs, separated
1 cup sugar
Heat together the milk, vanilla, quick cooking tapioca, 1 cup sugar, and 4 egg yolks, stirring constantly. Bring to a boil, reduce heat to a slow boil and cook for 5 minutes.
Remove pan from heat. Beat egg whites with the remaining sugar until stiff peaks form. Lightly fold the beaten egg whites into the tapioca mixture and stir gently for 90 seconds.

Paul Bunyan was one of my favorite childhood stories! I do not like tapioca but it was Richard's favorite pudding. Have a great Wednesday!
Like Paula said, Paul Bunyan and Babe were favorites of mine, once upon a time.
Aw, tapioca! I've never tried making it, but it was pretty much a staple in my parent's home ... I loved to 'filch' a spoonful every now 'n then when no-one was looking. Nowadays, mother's tapioca bowl is a treasured part of my 'ish' room, where it sits collecting bits of my everyday.
My mom (RIP) used to make homemade tapioca on a weekly basis, when I was growing up. That's one of the things I miss most from her kitchen.
