Today is Audacity to Hope Day which is a day for every one across the world to recommit to their dreams with the audacity to hope that they can be achieved. Is a day for all those who hope, try, and work towards things that seems impossible.
The day can be used to reexamine your goals, find paths to achieve them, and instill in yourself the belief that your goals are attainable. The hope that you can achieve your goal is what will drive you forward. It is a day to reflect on all those who have hoped in the past, and to use their hope to inspire you.

There is no doubt about it, we all need a little hope in our lives. Life can be hard. Sometimes, we have to endure a bad day. Other times, we face unrelenting heartache. No amount of tears can bring it to an end. Most of us face difficult times more often than we would like. Yet as difficult as life can be, hope guides us and gets us through the storms of life.
They are saying it may be a stormy day today and I’m hoping to get out and back from church this morning without getting wet. I’m hoping that everyone enjoys a safe and happy summer vacation. There’s hope that it may be sunny tomorrow. I’m hoping to enjoy a restful day. I do have a lot of hope in my life.
One thing I know for sure is that we should never loose hope, we just never know what tomorrow might bring. It’s important that we keep our hopes and dreams alive.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is National Cheese Day which celebrates all the thousand varieties of cheese
In honor of the day I found this cheesy recipe to share today. I haven’t made it yet, but it’s a keeper.
Cheesy Pizza Panini
Makes 6 servings
12 slices of artisan bread
6 oz. pizza sauce
16 oz. mozzarella these, sliced
3 oz. pepperoni slices
2 Tablespoons olive oil or butter
Heat a panini press, or George Foreman grill will also work
Take two slice of bread and spread each with 1 tablespoon piece sauce. Layer with mozzarella slices and pepperoni. Put the bread slices together.
Brush olive oil or butter on the outside of the bread. Place sandwich inside the press and cook until golden brown and the cheese is melted.

It is always good to have hope. We can't lose sight of it, even on the bleakest of days. I hope it is a restful day for you, Ma!

This recipe sounds a lot like something DH's asked me to make for his breakfast/lunch today! (If I don't ruin it, I'll share in a future post.)
I simply can't imagine living without hope. In fact, I'm humming (Sinatra's version of) "High Hopes" right now ... it never fails to put a smile on my face!
