It’s Finally Summer Day. The Summer Solstice is the longest day of the year. The amount of daylight only goes down from here and for the next six months. Summer Solstice is the meteorological start of summer. It's time to enjoy vacations, great weather, pools, baseballs, and everything else that goes along with the favorite season of kids and most adults. Grab your favorite beverage and enjoy the season, because for many of us it is all too short.

This is the day I’ve been waiting for. The good Lord willing and the creek don’t rise, it’s the day to sign the final paperwork on the sale of the house. I think it’s appropriate too that is also the first day of Summer. Time to celebrate for sure !
It seems like summer has been here for quite awhile already with the high temps we’ve had. And it’s also a little sad thinking that from now on we’ll be loosing hours of day light one minute at at time. But on the bright side, that will happen slowly so while summer is here let’s enjoy it.
There are no big plans yet, but I’m thinking that when all is said and done, there will be a party happening for all my family and friends that helped so much to get me to this point. I couldn’t have done it without you all!
Still and all they say we shouldn’t presume the outcome till the fat lady sings. Hopefully this time tomorrow I’ll be singing.
The pictures today are of my favorite place to be, the beach.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Peaches and Cream Day!
Peaches with served with whipped cream is a classic dessert but in honor of this holiday I found this recipe to share:
Peaches and Cream Cobbler
Filling:
1 cup sugar
2 large Eggs, slightly beaten
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
4 cups peaches, peeled, sliced
For Cobbler
1 1/2 cups all-purpose flour
5 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup
Margarine, cut into chunks
1 large Egg, slightly beaten
3 tablespoons milk
Vanilla ice cream, if desired
Heat oven to 400 degrees. Combine all filling ingredients except peaches in bowl. Stir in peaches. Pour into uncreased 13 by 9 inch baking pan.
Combine 1 1/2 cups flour, 2 tablespoons sugar, baking powder and salt in bowl; cut in margarine with pastry blender or fork until mixture resembles coarse crumbs. Stir in egg and milk just until moistened. Drop mixture by teaspoonfuls over peaches; sprinkle with remaining sugar.
Bake 35-40 minutes or until golden brown and bubbly around edges. Spoon cobbler into individual serving dishes. Serve with ice cream, if desired.

Oh, I hope and pray today went as planned!
I think it's so interesting, everyone's differences. 'Just this morning I was thinking of that rousing song, "June is busting out all over" (Carousel); and frankly, scratching my head. This is the longest day, and here, I'm counting down time to the shortest. Ya, I'm that odd duck who's happiest when it's snowing or sleeting. Mother always said, ours would be a boring world if everyone liked the same things.
